Ice Cream Sandwich Icebox Cake – a cool and creamy dessert that just takes a few ingredients.  Dress it up anyway you like for an over the top summer treat!  

On a hot summer day ice cream just might be the best treat there is.  No bake desserts, like this Strawberry Cheesecake Lasagna are how I survive during the hot summer months.  

There is just something about a cool and creamy dessert that makes those hot summer days bearable.  Not to mention they are quick and easy to make, which is great for any day of the week.

I love a dessert that just has a few ingredients, but is sure to impress.  This Swiss Roll Ice Cream Cake definitely lives up to that, and this Ice Cream Sandwich Cake is going to do the same.  Just look at those layers!  

The really fun thing about this icebox cake is you can dress up the flavors however you want.  They sell mint chocolate ice cream sandwiches, or cookies and cream, straight vanilla, or even chocolate!  Then you you can sprinkle with Andes mints if using mint, or Oreos if using cookies and cream.  So many possibilities!

  • Ice Cream Sandwiches
  • Heavy Cream
  • Powdered Sugar – I used Imperial Sugar for this recipe
  • Vanilla Extract
  • Caramel Sauce
  • Chocolate Sauce
  • Mini M&M’s
  • Mini Chocolate Chip Cookies

You really can make this as easy or as involved as you want to! Make the Homemade Whipped Cream called for in the recipe, or use store bought whipped topping. Use Homemade Hot Fudge in place of store bought chocolate sauce. And you really can decorate however you want!

How to Make Ice Cream Sandwich Cake

  • This recipe could not be much simpler.  You start with your favorite ice cream sandwiches that you buy from the store. 
  • Next you whip up a batch of homemade whipped cream. This is what takes it from good to over the top!  I mean, nothing beats homemade whipped cream!  
  • Decide on what toppings you want to use.  I was going for a traditional ice cream sundae cake, so I used chocolate sauce, hot fudge, M&M’s and a couple crushed up cookies.  But you could use sprinkles, butterscotch sauce, bananas, crushed Oreos….you name it, just pick what you like and go for it!  
  • To assemble you alternate a layer of ice cream sandwiches with a layer of whipped cream. Then let it set up in the freezer for a couple of hours before you take it out to add your toppings and serve.

Recipe Tips & Tricks

  • Get creative with the toppings! Use sprinkles, butterscotch sauce, bananas, crushed Oreos….you name it, just pick what you like and go for it!  
  • You can definitely make this the day ahead of time. I just like to decorate right before serving so nothing melts or spreads and the colors don’t bleed.
  • Let it set up completely. The whipped cream needs to really solidify or it will be a mess when you go to slice it. So let it sit in the freezer for a couple of hours after you assemble it.
  • The recipe is written for an 8-inch square pan, but you can definitely double everything to make in a 13×9 inch baking pan if you want to feed a crowd.

And trust me, you are going to be asked for the recipe every time you bring it out.  This icebox sandwich cake is always a hit!

Ice Cream Sandwich Ice Box Cake

Ice Cream Sandwich Icebox Cake – a cool and creamy dessert that just takes a few ingredients.  Dress it up anyway you like for an over the top summer treat!

Ingredients 

  • 12 ice cream sandwiches
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons caramel sauce
  • 3 tablespoons chocolate sauce
  • 2 tablespoons mini M&M’s
  • 6 mini chocolate chip cookies, chopped

Instructions 

  • In an electric mixer fitted with the whisk attachment, beat heavy cream on high for a couple minutes until you get soft peaks. Add in powdered sugar and vanilla extract and whip until stiff peaks. 
  • Arrange 6 ice cream sandwiches along the bottom of an 8X8-inch pan. You can cut them in half to make them fit.
  • Spread half of whipped cream over ice cream sandwiches. Drizzle half of caramel and chocolate sauce over whipped cream. 
  • Repeat with remaining ingredients. 
  • To decorate, sprinkle with M&M’s and chocolate chip cookies. 
  • Freeze for 3 hours to let it set, and then slice to serve.
