These Homemade McGriddles are a fun way to mix up breakfast. Pancake Breakfast Sandwiches are customizable, easy to make, and so much better than the fast food variety.

One of my sons favorite foods when he was little was a sausage McGriddle. We didn’t eat out often, but it was something he loved. He always got a version without egg, but today I am adding egg for some more protein. And because he is now an adult and likes it that way!

I have a couple other breakfast sandwiches on the blog already. We have Breakfast Sliders, Bacon Egg and Cheese Sandwich as well as a Sausage Breakfast Sandwich that is great to have in the freezer for quick mornings.

This Homemade McGriddle starts with a fluffy pancake that has a hint of cinnamon and maple syrup baked in. Then it is topped with your favorite sausage and a fluffy egg. All of the breakfast food groups are present and it is hearty, filling, and oh so good!

What You’ll Need

  • All-Purpose Flour
  • Granulated Sugar
  • Cinnamon
  • Baking Powder
  • Baking Soda
  • Salt
  • Buttermilk – don’t worry you can make Homemade Buttermilk in less than a minute if you don’t have any on hand.
  • Eggs
  • Maple Syrup
  • Vegetable Oil
  • Vanilla Extract
  • Sausage Patties

You could definitely use your favorite Buttermilk Pancakes for this recipe, but the McDonalds version has cinnamon and maple syrup in the pancake. So that is what I used for this version.

How To Make Homemade McGriddles

  • Make Pancakes. Start by mixing your dry ingredients together in a bowl. Mix the wet ingredients separately and then combine. The batter will have some lumps, that is ok.
  • Cook Pancakes. Scoop about 2 tablespoons of batter onto a hot griddle or skillet and cook for 2-3 minutes, until lots of tiny bubbles form on the surface. Flip and cook for another 1-2 minutes until cooked through.
  • Cook Eggs. There are many ways you can cook the eggs. You can bake them in a 13×9 inch pan (Sausage Breakfast Sandwich uses this method), so you just cut out pieces that you need. You can cook multiple fried eggs at one time in a skillet. Or if you want fluffy folded eggs, beat 1 egg with 1 teaspoon of water and pour into a hot skillet. Let it cook for about 2 minutes, until mostly cooked through. Fold into thirds (like you are folding over the filling of an omelet. Then fold that in half the other direction.
  • Cook Sausage. Follow the directions on your sausage to cook completely.
  • Assemble. Top 8 pancakes with a sausage patty, 1 egg, and then top with an additional pancake.

Recipe Tips & Suggestions

  • These freeze really well. So if you don’t need all 8 at one time, you can wrap in a paper towel, and then wrap in foil or parchment paper. Store in the freezer, and then microwave in the paper towel for 1 minute, rotate and about another 45 seconds for a hot sandwich.
  • Cheese is often included in breakfast sandwiches. I didn’t add it here, but a slice of Cheddar or American cheese would be delicious.
  • Mix up the eggs. I used scrambled for this sandwich, but my family loves a good runny yolk as well. So sometimes I will top a few of them with a fried egg instead.
  • Use your favorite sausage. It can be pork breakfast sausage, turkey, chicken etc. The only goal is to get the pancakes about the same size as the sausage patty.
  • I used my medium cookie scoop, which is about 2 Tablespoons to make pancakes that were the perfect size for the sausage patties I used.
  • There are a few steps involved in this recipe. To keep everything warm while you work, you can heat an oven to 200º F. and place items in there to stay warm.

Storage

These are a great thing to make ahead and have on hand for busy mornings. You can store them in the fridge for up to 4 days. Or you can freeze them for up to 3 months.

Assemble once they are cool and wrap tightly with foil or plastic wrap. Once you are ready to serve you can microwave for 1-2 minutes until they are warmed through.

Homemade McGriddles

Pancake breakfast sandwiches are brinner – breakfast for dinner! Make them at home using pancakes, sausage, egg, and cheese.
Prep: 15 minutes
Cook: 20 minutes
Total: 35 minutes

Ingredients 

Instructions 

  • Heat large skillet or a griddle over medium heat.
  • In a large bowl mix together flour, sugar, cinnamon, baking powder, baking soda and salt.
  • In a 2 cup measuring cup, mix together buttermilk, egg, maple syrup, vegetable oil, and vanilla. Pour into flour mixture, and mix until combined. There will still be some lumps.
  • Pour about 2 Tablespoons of batter onto the hot griddle (you want the pancakes to be about the size of your sausage patties). Let cook until tiny bubbles form on top of the pancakes. Flip and cook for another 1-2 minutes.
  • Meanwhile, cook your sausage patties according to the package directions.
  • Heat a skillet over medium heat. Beat 1 egg in a bowl with 1 teaspoon of water. Lightly spray or brush the skillet with butter. Pour in the egg and let it spread into a thin layer. Cook for 1-2 minutes until mostly cooked through. Fold into thirds, like you would an omelet. And then fold in half. Remove and continue with the remaining eggs.
  • To build your sandwiches place a sausage patty on one pancake. Top with the egg and another pancake.
  • Serve immediately.

Notes

To keep warm, you can place in a 200º F oven until everything is ready to serve.
