This breakfast pizza recipe is one of my favorite things to make on weekends! It’s perfect for brunch, packed with all of our breakfast favorites, including fluffy eggs, juicy sausage, and lots of cheese. It’s the ultimate lazy cook’s breakfast because it’s super quick to assemble and bake in 30 minutes or less. I couldn’t resist giving this breakfast pizza a Southern touch with white country gravy as the base. You’re going to love finding new ways to make it your own, too!

Ingredients You’ll Need

This sausage, egg, and cheese breakfast pizza calls for basic breakfast ingredients. I’ve included some notes here. Scroll down to the recipe card for a printable list of ingredients along with the amounts.

  • Pizza Crust – On mornings when the coffee hasn’t kicked in enough to make homemade no-knead pizza dough, I use a refrigerated Pillsbury pizza crust. This pizza turns out great with either one!
  • Eggs – You’ll make scrambled eggs by combining eggs with milk, salt, and pepper.
  • Gravy – In place of tomato sauce, I make my breakfast pizza with a base of white country gravy, like the kind used for biscuits and gravy. This easy all-purpose homemade gravy recipe works, too.
  • Breakfast Sausage – You can substitute sausage with cooked crumbled bacon, chorizo, ham or any protein you like.
  • Cheese – I like shredded cheddar, mozzarella, or Monterey Jack. You can also use a blend of different cheeses.
  • Cornmeal – For dusting the bottom of the pizza crust.

How to Make a Breakfast Pizza

There’s just a teensy bit of prep to get your toppings ready to go, and then this breakfast pizza couldn’t be easier to assemble. Follow the step-by-step below. Scroll to the recipe card for printable instructions.

  • Cook the meat. First, sear the sausage in a skillet. I find that draining the sausage on paper towels after it’s cooked makes it less greasy.
  • Prepare the pizza crust. Next, sprinkle a sheet pan with cornmeal. Roll out the pizza crust, and par-bake the crust at 425ºF for 7 minutes. 
  • Scramble the eggs. Lastly, you’ll scramble the eggs in the same skillet that you used to cook the sausage. Cook over low heat until they’re soft and fluffy.
  • Assemble the pizza. With your toppings ready, spread the gravy over the baked crust, and add your sausage, eggs, and shredded cheese. 
  • Bake. The pizza goes back into the oven for another 8-9 minutes (at 425ºF) until the cheese is melted and the crust is toasted. Then, you’re ready to slice and serve!

Recipe Tips

These are my final quick tips for the best breakfast pizza:

  • Prick the crust with a fork before baking. Like docking a pie crust for a pie or a quiche, you’ll want to poke holes in the top of the pizza dough with a fork before you par-bake it. This gives the steam somewhere to escape and keeps the crust from puffing up in the oven.
  • Crank the oven. The key to a crispy crust is to bake your pizza at a high temperature. For this recipe, get your oven preheated to a hot 425ºF.
  • Add garnishes after baking. This pizza tastes delicious topped with fresh herbs like basil or parsley, or sliced avocado. Just be sure to add any fresh garnishes only after the pizza’s done baking.
  • Make single-serving pizzas. You can divide your dough and shape it into smaller-sized pizza crusts for personal pizzas.

More Topping Ideas

Remember when I said that there are loads of ways that you can change up this pizza recipe? Here are a few easy ideas to get you started:

  • Other meats. Instead of pizza, use another protein like cooked bacon, diced ham, spicy sausage, or chorizo.
  • Add veggies. Get in a morning dose of vegetables by adding sauteed bell peppers, tomatoes, caramelized onions, or mushrooms to a breakfast pizza. Crispy potatoes or hashbrowns would also be amazing!
  • Different base. Instead of gravy, make this recipe with a white pizza base (like my mushroom and ham white pizza), or you can always stick with a traditional tomato-based sauce.
  • Cheese. Instead of (or on top of) shredded cheese, top this pizza with crumbled feta, goat cheese, or any cheese you’d like.
  • Fried eggs. Instead of scrambling the eggs, assemble the pizza as directed and then crack your eggs right over top. They’ll fry up at the same time that the pizza bakes in the oven.
  • Tex-Mex. Make a breakfast taco inspired version topped with sliced jalapeños, salsa, and black beans.

What to Serve With a Breakfast Pizza

With eggs, sausage, cheese, and gravy, a slice of this pizza is like an all-in-one breakfast! But if you’d like to serve this pizza as part of a larger brunch spread, you can’t go wrong with a fresh fruit salad or fruit skewers. We also love a sweet side of lemon raspberry muffins or cinnamon rolls.

Storing and Reheating Leftovers

  • Refrigerate. This breakfast pizza will last for up to 3 days in the fridge. Store any leftover slices in an airtight container once they’re completely cool.
  • Reheat. For best results, reheat your breakfast pizza in the oven until it’s warmed throughout.

Breakfast Pizza

This satisfying breakfast pizza recipe combines all of your favorite breakfast foods on top of a crispy pizza crust. Baking this pizza in a sheet pan makes it super easy!

Ingredients 

  • 13.8 oz Pillsbury pizza crust
  • 8 whole large eggs
  • 1/4 cup milk
  • Salt & Pepper to taste
  • 1 cup country gravy
  • 10 oz breakfast sausage
  • 2 cups shredded cheese, cheddar, mozzarella, Monterey jack
  • 1 Tablespoon cornmeal for dusting

Instructions 

  • Preheat oven to 425º F. Grease or spray a large sheet pan with non-stick spray, and sprinkle evenly with cornmeal. Set aside. 
  • In a skillet over medium-high heat, cook the sausage, breaking it apart into small pieces for 6-7 minutes until it is cooked through. Transfer to a plate lined with paper towel to collect the grease
  • Open the tube of pizza dough and spread it onto the prepared pan. Roll or use your hands to spread it into about a 14×10-inch rectangle. Use a fork to poke holes over the top of the crust. Bake the crust for 7 minutes, until lightly golden brown.
  • Meanwhile, in a large bowl beat the eggs together with the milk and season with salt and pepper to taste. Pour the eggs into the skillet and cook over medium heat, stirring frequently until lightly scrambled. Remove from the heat.
  • Once the crust is golden brown, remove it from the oven. Spread the country gravy over the top to act as the sauce. Top with sausage, scrambled eggs, and cheese.
  • Bake for 8-9 more minutes until the crust is golden and the cheese is melted. Remove from the oven and slice to serve.
