This Breakfast Pizza is a fun and easy way to switch up your morning routine. A crispy crust is topped with eggs, cheese, and breakfast favorites like sausage or bacon for a hearty meal that works for breakfast, brunch, or even breakfast-for-dinner.
Breakfast pizza combines everything you love about a hearty breakfast with the comfort of pizza night. A crispy crust topped with fluffy eggs, melty cheese, and savory breakfast meats makes this recipe both filling and fun.

This breakfast pizza recipe is one of my favorite things to make on weekends! It is so easy to customize with whatever your family likes! You can use ham or bacon or chorizo instead of sausage. Add bell peppers and onions for a little bit of veggies. Great way to use up what is in your fridge, and get a fun meal on the table in about 30 minutes.

- Pizza Crust – You can use a store bought crust or homemade no-knead pizza dough, anything works!
- Eggs
- Milk
- Salt & Pepper
- Country Gravy – You can absolutely make your own, but I like to just use the packet and follow those directions to make this quick and easy.
- Breakfast Sausage – Swap any breakfast meat you like; ham, bacon, chorizo etc.
- Cheese
- Cornmeal


Breakfast Pizza
Ingredients
- 13.8 oz Pillsbury pizza crust
- 8 whole large eggs
- 1/4 cup milk
- Salt & Pepper to taste
- 1 cup country gravy
- 10 oz breakfast sausage
- 2 cups shredded cheese, cheddar, mozzarella, Monterey jack
- 1 Tablespoon cornmeal for dusting
Instructions
- Preheat oven to 425º F. Grease or spray a large sheet pan with non-stick spray, and sprinkle evenly with cornmeal. Set aside.1 Tablespoon cornmeal for dusting
- In a skillet over medium-high heat, cook the sausage, breaking it apart into small pieces for 6-7 minutes until it is cooked through. Transfer to a plate lined with paper towel to collect the grease10 oz breakfast sausage
- Open the tube of pizza dough and spread it onto the prepared pan. Roll or use your hands to spread it into about a 14×10-inch rectangle. Use a fork to poke holes over the top of the crust. Bake the crust for 7 minutes, until lightly golden brown.13.8 oz Pillsbury pizza crust
- Meanwhile, in a large bowl beat the eggs together with the milk and season with salt and pepper to taste. Pour the eggs into the skillet and cook over medium heat, stirring frequently until lightly scrambled. Remove from the heat.8 whole large eggs, 1/4 cup milk, Salt & Pepper to taste
- Once the crust is golden brown, remove it from the oven. Spread the country gravy over the top to act as the sauce. Top with sausage, scrambled eggs, and cheese.1 cup country gravy, 2 cups shredded cheese
- Bake for 8-9 more minutes until the crust is golden and the cheese is melted. Remove from the oven and slice to serve.

How to Make a Breakfast Pizza
- Cook the meat. First, sear the sausage in a skillet. I find that draining the sausage on paper towels after it’s cooked makes it less greasy.
- Prepare the pizza crust. Next, sprinkle a sheet pan with cornmeal. Roll out the pizza crust, and par-bake the crust at 425ºF for 7 minutes.
- Scramble the eggs. Lastly, you’ll scramble the eggs in the same skillet that you used to cook the sausage. Cook over low heat until they’re soft and fluffy.


- Assemble the pizza. With your toppings ready, spread the gravy over the baked crust, and add your sausage, eggs, and shredded cheese.
- Bake. The pizza goes back into the oven for another 8-9 minutes (at 425ºF) until the cheese is melted and the crust is toasted. Then, you’re ready to slice and serve!


Recipe Tips
- Prick the crust with a fork before baking. Like docking a pie crust for a pie or a quiche, you’ll want to poke holes in the top of the pizza dough with a fork before you par-bake it. This gives the steam somewhere to escape and keeps the crust from puffing up in the oven.
- Crank the oven. The key to a crispy crust is to bake your pizza at a high temperature. For this recipe, get your oven preheated to a hot 425ºF.
- Add garnishes after baking. This pizza tastes delicious topped with fresh herbs like basil or parsley, or sliced avocado. Just be sure to add any fresh garnishes only after the pizza’s done baking.
- Make single-serving pizzas. You can divide your dough and shape it into smaller-sized pizza crusts for personal pizzas.

More Topping Ideas
- Other meats. Instead of pizza, use another protein like cooked bacon, diced ham, spicy sausage, or chorizo.
- Add veggies. Get in a morning dose of vegetables by adding sauteed bell peppers, tomatoes, caramelized onions, or mushrooms to a breakfast pizza. Crispy potatoes or hashbrowns would also be amazing!
- Different base. Instead of gravy, make this recipe with a white pizza base (like my mushroom and ham white pizza), or you can always stick with a traditional tomato-based sauce.
- Cheese. Instead of (or on top of) shredded cheese, top this pizza with crumbled feta, goat cheese, or any cheese you’d like.
- Fried eggs. Instead of scrambling the eggs, assemble the pizza as directed and then crack your eggs right over top. They’ll fry up at the same time that the pizza bakes in the oven.
- Tex-Mex. Make a breakfast taco inspired version topped with sliced jalapeños, salsa, and black beans.

Storing and Reheating Leftovers
- Refrigerate. This breakfast pizza will last for up to 3 days in the fridge. Store any leftover slices in an airtight container once they’re completely cool.
- Reheat. For best results, reheat your breakfast pizza in the oven until it’s warmed throughout.
