Peanut Butter Chocolate Chip Muffins – light and fluffy peanut butter muffins studded with chocolate chips. A peanut butter and chocolate lover’s dream come true!

It is no secret I like muffins. It is no secret the entire world likes Peanut Butter and Chocolate. I have already made a muffin that had Chocolate Base with Peanut Butter Chips. Now I wanted to make a Peanut Butter Muffin with Chocolate Chips. I just couldn’t help it! After I made the Peanut Butter and Jelly Muffins from Connor’s Cooking, this just seemed like the next natural progression. Let me tell you, these were a winner! I brought them to a friends house so we had treats to munch on while managing her garage sale. They disappeared quickly, they were moist and delicious!
To my family they think that I specialize in two things for the blog; Muffins and one pan dinners. I do seem to have a lot of recipes of both, so I guess they are partly right. When I started this blog my son was 5 years old. He didn’t have much of an opinion about food. He ate what I gave him and that was about it. Well now he just turned 11 and has an opinion. And he loves muffins and one pan dinners, do I guess you can see why I have a lot of recipes for those things! Another thing he loves, and asks for. Anything with peanut butter!
A kid after my own heart. He loves peanut butter and chocolate as much as I do. So instead of his normal favorite chocolate chip muffins, I mixed it up. I made peanut butter chocolate chip muffins. A moist peanut butter muffins filled with lots of chocolate chips! What more could a peanut butter lover ask for? These muffins freeze really well. I always put them in a zip-top bag and put them in the freezer. Then my son can pull them out and microwave them for breakfast in the morning. Super easy, and everyone is happy!

Peanut Butter Chocolate Chip Muffins
Ingredients
- 2 cups all purpose flour
- 1 1/2 teaspoons salt
- 1 tablespoon baking powder
- 1 cup milk
- 2 large eggs
- 2/3 cup granulated sugar
- 1 cup creamy peanut butter
- 1/3 cup vegetable oil
- 1 cup chocolate chips
Instructions
- Heat oven to 375. Spray muffin pan with no stick spray.
- Stir together flour, salt, baking powder, and chocolate chips in a large bowl. Combine milk, eggs, sugar, peanut butter and oil in a separate bowl; combine ingredients until just moistened. Do not over beat.
- Fill 18 muffin tins. Top with a few extra chocolate chips. Bake for 14 minutes. Enjoy!

I swapped the milk and oil for coconut milk & oil. They turned out great. I also filled the cups to just shy of full, put to 400 for 5 minutes then put down to 375 and cooked as instructed. Made for nice puffy muffin tops.
I added a spoonful of Nutella in center for surprise… very good!
Iโve made these several times for my granddaughters. I use mini muffin pans and bake for 5 minutes at 400 then reduce temp to 375 for 8 minutes. Theyโre perfect. Thank you for a keeper recipe.
I think the salt amount is too much. Came out saltier than sweet. I would take it down to just one teaspoon next time.
