Samoa Cookie Pie – The classic Girl Scout Samoa Cookies in the form of a pie! Buttery cookie crust topped with chocolate, caramel and toasted coconut.

I was a girl scout in elementary school and loved when it was time to sell cookies. I didn’t actually enjoy going around to sell them, but I loved the cookies and the number of boxes that ended up at our house! Thin Mints and Samoas were my favorites!

This pie is so easy to make and tastes like the beloved Girl Scout Samoa Cookie. It starts with a brown sugar shortbread/sugar cookie type base. There is no mixer required to make it either! Just a mixing bowl and spatula is all you need.

The cookie is topped with a layer of chocolate chips, caramel and coconut for all the classics in one bite!

  • Salt
  • Chocolate Chips
  • Sweetened Condensed Milk
  • Sweetened Coconut
  • Caramel Sauce

The Girl Scout Cookie version has the bottom dipped in chocolate as well as drizzled on top. Obviously this pie doesn’t have that. But there is a layer of chocolate in the middle to make up for it!

I like to use store bought caramel sauce for this, but if you have a favorite homemade version you can definitely use it!

You will see the recipe calls for exact measurements of caramel sauce and sweetened condensed milk, but they really are just a guide. You can estimate about half the can of sweetened condensed milk, you really just want to make sure everything is evenly coated.

If you have fond memories of Girl Scout cookies like I do, this cookie pie is a must make. Super easy to make and absolutely delicious!

Samoa Cookie Pie – The classic Girl Scout Samoa Cookies in the form of a pie! Buttery cookie crust topped with chocolate, caramel and toasted coconut.
Prep: 10 minutes
Cook: 35 minutes

Ingredients 

Instructions 

  • Preheat oven to 350 degrees F.
  • In a medium sized bowl, whisk together melted butter, egg, brown sugar, and vanilla until smooth.
  • Mix in flour and salt, stirring until everything is well blended.
  • Press into a 9 inch pie plate and bake for 10 minutes.
  • Remove from oven and sprinkle chocolate chips evenly over the dough. Top with coconut. Drizzle sweetened condensed milk over the top until everything is lightly coated. Finally pour caramel sauce evenly over the top.
  • Return to the oven and bake for 25 minutes until it is bubbly and the center appears golden and dry.
  • Remove from the oven and let sit for 10 minutes. Drizzle melted chocolate over the top.
  • Let the pie set for at least 4 hours before slicing.
