All you have to do is add the ingredients to the slow cooker, let it simmer until the chicken is perfectly tender, and then bake your biscuits when it is time for dinner.   • Chicken Breasts
  • Onion
  • Cream of Chicken Soup – you can use Homemade Cream of Chicken Soup if you want to avoid canned condensed soup.
  • Milk
  • Frozen Mixed Vegetables
  • Garlic Powder
  • Onion Powder
  • Poultry Seasoning
  • Salt
  • Black Pepper
  • Biscuits – you can use a tube of Pillsbury Biscuits, of you can make Easy Biscuits or even Buttermilk Biscuits to serve with it.

Slow Cooker Chicken Pot Pie

This Slow Cooker Pot Pie has all the cozy flavors you love, tender chicken, creamy sauce, and mixed vegetables, all made easy in the crockpot for a stress-free dinner.

Ingredients 

Instructions 

  • Arrange chicken in the base of the crockpot.
    1.5 pounds boneless chicken breasts
  • In a bowl mix together chicken soup, milk, mixed vegetables, onion, and seasonings until well combined. Pour over the chicken.
    2 10 oz cream of chicken soup, 1/2 cup milk, 12 oz frozen mixed vegetables, 1 small onion, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1/2 teaspoon poultry seasoning, 1/2 teaspoon salt, 1/4 teaspoon black pepper
  • Cover the crockpot and cook over low for 3.5 hours or until the chicken is tender and cooked through.
  • Bake biscuits according to the package directions or your homemade recipe.

  • Once the chicken is cooked, remove and use forks to shred. Add back to the crockpot and mix to combine everything.
  • Serve topped with biscuits

How To Make Slow Cooker Chicken Pot Pie

  1. Mix Sauce. In a bowl mix together the cream of chicken soup, milk, mixed vegetables and the seasonings.
  2. Add To Slow Cooker. Start by arranging the chicken in the base of the crockpot. Pour the soup mixture evenly over the top of the chicken.

  1. Cook. Cover and cook on low for 3-4 hours, until the chicken is tender and cooked through.
  2. Biscuits. If using a tube of biscuit dough, open and bake according to package directions. Or use your favorite homemade biscuits. Homemade Cheddar Bay Biscuits is another delicious alternative.

  1. Shred. Once the chicken is cooked through, remove from the crockpot and use forks to shred. Add back to the crockpot and mix to combine with the sauce.
  2. Serve. Scoop the pot pie mixture into bowls and serve with prepared biscuits.

Recipe Tips & Suggestions

  • Topping. This recipe calls for biscuits, but you could use puff pastry or even pie crust. Cut either into strips and bake as the package directions.
  • Cooking. I only use my crockpot on low, I think high gets too hot with modern day crockpots and dries everything out. Chicken is cooked in about 3.5 hours, if you cook all day like a lot of recipes say your chicken will be dry. It is part of the reason people don’t like chicken in the crockpot. Once I started cooking it just until it reached 165º F, I actually enjoy meals from the slow cooker.
  • Homemade. You can skip the canned soup if you want, make Homemade Cream of Chicken Soup. Skip the tube of biscuit dough and make your own biscuits.
  • Vegetables. I use a 12 oz bag of peas and carrots for mine as that is what my family likes. Mixed Vegetables often add green beans and corn to the mix as well. My family doesn’t love green beans, so I skip those. But you can use any combination of vegetables to get to about 12 oz.

Storage

Leftover chicken pot pie can be store in an airtight container in the fridge. It will last for 3-4 days. Just reheat in the microwave to warm it through. Store your biscuits separately and you can reheat those in a toaster over or the oven to get them warm.
