Creamy Salsa Chicken – Taco spiced chicken cooked with corn and salsa, and sour cream mixed in to make it creamy and delicious! One pan and 20 minutes!
Do you ever get ridiculously proud of yourself for accomplishing little things. Or staying motivated and getting a bunch of little things done in a day. Like when you actually wash, fold, and put away 5 loads of laundry. Or when you don’t have dinner planned and everyone is hungry, but you come up with something out of nothing and everyone is happy. Or when you have 4 bananas that are about to get thrown away, and you decide to instantly make a double batch of your favorite Chocolate Oatmeal Banana Blender Muffins to go in the freezer. Yeah, that was my day yesterday, and I was way to proud of myself. I mean, I did nothing major!
I wish I could say this creamy salsa chicken was what I made out of nothing yesterday, but it isn’t. It is something I threw together after forgetting to start the shredded slow cooker version I was making year ago. You know the one, you put chicken, taco seasoning, corn, maybe black beans and a jar of salsa in the crock pot and just let it go. Well, when you realize you forgot to actually assemble it all, and it is 4:00 you improvise. And this creamy salsa chicken is the result. I have to say we like it much better and have not gone back to the slow cooker version since.
This creamy salsa chicken comes together in one pan. You just have to season the chicken with your favorite taco seasoning, then brown until it is mostly cooked. Then add in your salsa, corn, black beans if you like and let is simmer for a few minutes. I stir in the sour cream when it is off the heat so it doesn’t curdle, and stays creamy and delicious. I like to serve over our favorite Mexican Rice and top with cilantro. If you use chicken tenders or chicken cutlets your chicken will cook faster, so keep and eye on it. You could skip the rice and chop up the chicken for burritos or tacos if you wanted. Or make extra creamy salsa chicken and use the leftovers for quesadillas or salads later in the week.

- 1 to 1 1/2 pound boneless skinless chicken breasts or tenders
- 1 packet taco seasoning
- 2 cups salsa
- 1 cup corn kernels
- 1/4 cup sour cream
- 1 lime, juiced
- fresh cilantro, for garnish
- Sprinkle chicken on both sides with taco seasoning.
- In a large skillet over medium high heat, brown chicken for 4-5 minutes on each side.
- Add corn and salsa to the pan. Simmer for 10 minutes until the chicken is fully cooked,
- Remove pan from heat and stir in the sour cream and lime juice.
- Sprinkle with fresh cilantro to serve.
