We are driving back to Colorado today. It has been a great trip. We were able to spend lots of time in Wisconsin with our parents. Then we stopped in Iowa for a couple days and spent some time with friends. I am very glad we were able to make this trip this summer.
Today I am bringing you a recipe as part of the group #SundaySupper. I have seen it around for awhile, but got the chance to participate this week. The Family Table can be anywhere as long as the main ingredient is Love.” Isabel from Family Foodie came up with the group, and does an amazing job organizing it! #SundaySupper is joining forces with LAND O LAKES® this week for Simple and Fresh Summer Recipes.
LAND O LAKES® has a new product out, you may have seen in in your store already. It is Butter with Olive Oil & Sea Salt. It is your normal sweet cream butter with a hint of olive oil taste, and sea salt. The sea salt helps to really enhance the flavors of your food. This is perfect for quick weeknight meals. You can add great flavor to your meals without a lot of extra work!
Avocados are a great summer food in my opinion. I could eat them all year round, but in the summer they are all over the place, and pretty cheap. Add fresh juicy tomatoes, and bacon, and you have a great grilled cheese sandwich. Simple, fresh ingredients, and great for a quick summer meal.

Bacon Avocado Grilled Cheese

A grilled cheese with bacon, avocado and tomatoes
Ingredients
- 2-3 strips bacon, , cooked
- 1/2 avocado, , mashed
- Salt and Pepper to taste
- 2 slices Colby Cheese, (or a sharp cheddar)
- Sliced tomato
- 2 slices good bread
- 2 tsp Land O Lakes Butter with Olive Oil & Sea Salt
Instructions
- To assemble the sandwich lay a slice of cheese on each piece of bread. Spread the mashed avocado over 1 of the slices of cheese.
- Sprinkle with salt and pepper to taste. Press the strips of bacon into the avocado, and top with tomatoes.
- Close the sandwich, and spread about a tsp of butter to the outside of each piece of bread.
- Cook in a pan over medium heat until toasted. Flip the sandwich, and cook until the other side is toasted and the cheese is melty!
