We had so much fun last weekend with our #SundaySupper birthday celebration! I think this one might be just as fun though. This week the theme is Retro Recipes Than and Now. There are so many old school recipes, I can’t wait to see what everyone came up with and put their twist on.
I decided to do Brussels Sprouts. They get such a bad rap. But really, if you cook them correctly, they are so good! Traditionally Brussels Sprouts were steamed to death. So they were soggy and bitter. Not good! I, for one am a firm believer in roasting veggies. Asparagus is another example. If you steam them, I think they are kind of gross. But roast them, and I could eat them every day! It doesn’t hurt that for these I added a little bacon, onion, and balsamic vinegar. But often I just toss the sprouts in a little olive oil, sprinkle with salt and pepper, and roast for 15 minutes.
I mentioned these on Facebook the night I made them, and people were very excited for the recipe. One person had just tried Brussels Sprouts for the first time the night before. But she steamed them in a bag, and was not impressed. I think I convinced her that they need to be tried this way for a whole new experience!
- 1 pound Brussels Sprouts, trimmed
- 4 strips bacon, chopped
- ⅓ cup onion, chopped
- 1 Tbls olive oil
- 1 Tbls balsamic vinegar
- salt and pepper to taste
- Preheat oven to 425 degrees.
- Toss Brussels sprouts with olive oil, and sprinkle with salt and pepper. Spread onto a baking sheet. Bake for 10 minutes.
- Meanwhile, in a large skillet saute bacon and onion together until the bacon is crisp, and the onions are soft. Add the Brussels sprouts to the pan, mix everything together, and cook for 5 minutes. Drizzle balsamic vinegar, and toss to coat.
- Serve immediately.

Brussel sprouts have always seemed an elegant veggie and I love them roasted or steamed. I have typically served them with slivered almonds. But, I’m also a bacon and balsamic vinegar fan so your recipe looks like a definite winner, Erin.
I must be weird because I’ve always loved brussels sprouts. I love them best roasted, but I’ve tried them this way and loved them, too. I was also surprised that a pan toss with molasses makes ‘em darn god, too. What’s not to love about the darling little chou chous?

YUM. I made something similar last year for the first time and we found the addition of bacon added so much flavor to the brussel sprouts. I cannot wait to try your recipe with the addition of balsamic vinegar…that bit of twang should elevate the dish to great flavor heights.

I just learned how good brussels sprouts can be if cooked correctly…I want to try these! I can buy them cut into small pieces at TJs. Roasted broccoli is really good too, BTW.

I love roasted veggies but have always been wary of brussel sprouts. Probably traumatized from a steamed brussels experience.

I so want to love Brussels sprouts, and have tried them a few ways, but I am just not a fan. But I agree about roasting veggies. Why did they not do this back in the day?!
My grandmother LOVES brussels sprouts. As a kid I fought her tooth and nail to not eat these. I grew up and now on occasion her and I will snack on them. Never thought to add bacon to them!
This is my new favorite dish – Balsamic vinegar and brussel sprouts roasted in the oven. Bacon is awesome in the dish too! YUM! Great dish for this week!

I cooked brussel sprouts today as well (for a rice and curry meal). My husband would loves these with bacon and balsamic because that’s what he was hoping I would do with the brussel sprouts when I brought them home. Next time after seeing this.

It’s funny, but I wasn’t aware of roasted Brussels sprouts until relatively recently (in the last two years). It’s given me a whole new respect for Brussels sprouts.
Roasted Brussels sprouts are my favorite. We have been adding bacon since that makes my husband pretty much OK with eating anything.
brussels and bacon are my “last meal” request. I love the combination more than anything!

Brussel sprouts have so many benefits, unfortunately we don’t get them here so easily in India. Great idea to roast them, that should give the sprouts another flavor dimension.

I love brussels sprouts – especially when cooked with bacon. I bet the balsamic addition is bliss!
I love brussels sprouts and I have made it my mission to help convince people to give it a chance. Like you said most people have only ever had it steamed or boiled until it is mushy. Bad experiences with it have so many people convinced it isn’t a good veggie but with recipes like this I know more people would fall in love with these little green cabbages.
The first time I had Brussels sprouts was oven roasted with balsamic and that turned me into an instant fan. But adding bacon will take it to a whole other level! Sounds delicious!
I so very much agree that steamed or even worse, boiled, brussels sprouts are terrible. I could eat a whole platter of these roasted ones. Besides, bacon is involved. It has to be good!

I’ve only ever had brussel sprouts the steamed, gross, bitter way so I’m intrigued to try roasting them to see if I’d like them. This looks delicious – I love the char you got on your brussel sprouts. And I’m pretty sure the bacon dressing would win me over – bacon makes everything better!

I’m also a big believer in roasting veggies. Roasted asparagus, roasted broccoli, roasted cauliflower, roasted carrots…. and you can’t beat roasted brussels sprouts. This is a great recipe!

i must be on the minority but Brussels sprouts are my favorite veggies. I could eat them every single night for dinner. roasted are my favorite or stir fried.

I made this last night for a family barbecue and it was DELICIOUS! The only thing that I might change would be to cut the brussels sprouts in half (maybe mine were just huge because I bought them in a two pound bag from Costco). After roasting them for 10 minutes in the oven and then cooking them for 5 mins with the bacon, they were still a bit crunchy on the inside. But other than that, the flavors were great! Will definitely make this again.
