This Banana Baked French Toast is warm, cozy, and loaded with sweet banana flavor! It’s easy to prep ahead and bakes up soft and custardy inside with golden edges on top.

Wake up to something special with this Banana Baked French Toast! It’s soft, sweet, and full of banana and chocolate chips! It is like banana bread meets classic French toast. You get rich and custardy with golden, caramelized edges with a little chocolate in each bite.

This easy breakfast bake is perfect for feeding a crowd or prepping ahead for a relaxed weekend morning. Just layer bread, bananas, and a simple custard, then bake until perfectly golden. Prep everything the night before and just bake when ready to serve.

It’s delicious served warm with maple syrup, chopped nuts, or a sprinkle of powdered sugar.

Ingredients Needed

  • Cinnamon Swirl Bread – you can use any bread you like and add cinnamon to the custard mixture as well
  • Bananas
  • Mini Chocolate Chips
  • Eggs
  • Milk
  • Butter
  • Vanilla Extract
  • Old Fashioned Oats
  • Brown Sugar

How To Make Banana Baked French Toast

  1. Layers. Cut the bread into cubes, and slice the bananas into thin slices. Start with about 1/3 of the bread, top with sliced banana about about 1/3 of the chocolate chips. Repeat with the remaining ingredients for 2 more layers.
  2. Custard. Beat together the milk, eggs, butter and vanilla until really well combined. Pour over the bread cubes, and gently press down to make sure the bread is coated. Cover and place in the fridge for 3-24 hours.
  3. Topping. When ready to bake mix together the oats, brown sugar, and butter. Use your fingers to make a streusel like topping. Sprinkle over the casserole.
  4. Bake. Place in the oven and bake for 35-45 minutes. The top will be golden brown and slightly puffed up.
  5. Serve. Remove from the oven and let cool for a few minutes before slicing to serve. Serve with sliced bananas, maple syrup, powdered sugar or enjoy as is!

Recipe Tips & Tricks

  • Make Ahead. You want to let this sit for at least a couple of hours for the bread to soak up the custard mixture. But you can definitely make this the day before and store in the fridge until the next day. Just let it sit at room temperature while your oven preheats.
  • Cinnamon Swirl Bread. You can find cinnamon swirl bread in most grocery stores, but you really can use any bread. Just add cinnamon to the egg mixture to make up for the flavor.
  • Chocolate. Mini chocolate chips work best, and you really can get some in each bite. If you just want banana flavor, leave them out! Swap them for nuts or raisins as well.
  • Topping. I like old fashioned oats for the texture they give to the topping. But if you only have quick cooking, they will definitely work. Just add the topping before baking, it is best not to let it sit overnight.

Storage

Leftover banana baked French toast can be stored in the fridge. Just cover or transfer to an airtight container. It will last for 3-4 days. You can reheat slices in the microwave before serving.

Banana and Chocolate Chip Baked French Toast

Cozy banana baked French toast that’s soft, sweet, and full of flavor! Easy to make, great for brunch or holidays, and perfect with maple syrup.

Ingredients 

For the oatmeal topping:

  • Lightly coat an 9-inch square baking dish with nonstick spray. Place 1/3rd of the bread cubes evenly into the baking dish. Top with 1 sliced banana and about 1/3rd of the chocolate chips. Repeat with the remaining ingredients for 2 more layers.

  • In a large bowl, whisk together milk, eggs, butter and vanilla. Pour mixture evenly over the bread cubes. Gently press down to make sure the bread is mostly covered with the custard mixture. Cover and place in the refrigerator for several hours or overnight.
    1 1/2 cups milk, 4 large eggs, 2 tablespoons unsalted butter, 1 1/2 teaspoon vanilla extract
  • Preheat oven to 350º F.
  • To make the oatmeal topping, combine oats, sugar and cold butter, using your fingers to work the butter into the dry ingredients until it resembles coarse crumbs. Sprinkle the oatmeal topping evenly over the bread cubes.
    1/4 cup old fashioned oats, 1/4 cup brown sugar, 1/4 cup unsalted butter
  • Place into oven and bake for 35-45 minutes, or until golden brown.
  • Serve immediately, drizzled with syrup, if desired.
