Buffalo Chicken Burgers – These juicy burgers are packed with buffalo sauce, topped with melty cheddar, and finished with a cool ranch slaw for the perfect flavor balance. An easy weeknight dinner that tastes like game day, no fryer required.
There’s something about buffalo chicken that always wins people over, especially when it’s warm, messy, and layered onto a bun.

I threw these burgers together one weekend when we were craving wings but didn’t want to fry anything or get out every dish in the kitchen. It’s got the same flavor you expect from game-day wings but packed into a quick, weeknight-friendly meal.
The chicken stays juicy thanks to the sauce in the mix, the ranch slaw cools things down, and the cheddar melts into everything like it belongs there.
Why You’ll Love These Burgers
- Bold Buffalo Flavor – The buffalo sauce is mixed right into the patties, so every bite is packed with heat and tang.
- Juicy, Not Dry – Ground chicken stays tender thanks to the sauce and breadcrumbs in the mix.
- Minimal Prep – No chopping or complicated steps—just stir, shape, grill, and stack.

How To Make Buffalo Chicken Burgers
- Mix the burger ingredients – Combine ground chicken, buffalo sauce, garlic powder, onion powder, and breadcrumbs in a bowl until evenly blended.
- Shape and chill the patties – Form the mixture into four patties and place them in the fridge to firm up while prepping the toppings.
- Toss the slaw – Stir together the coleslaw mix and ranch dressing until the cabbage is well coated, then refrigerate until you’re ready to build the burgers.
- Grill the chicken patties – Cook the patties on a hot grill for about 6 minutes per side, or until cooked through and browned.
- Melt the cheese – Top each patty with a slice of cheddar and let it melt while still on the grill.
- Assemble the burgers – Layer each bun with a cheesy buffalo chicken patty and a scoop of cool ranch slaw.
- Serve and enjoy – Plate them up with extra buffalo sauce on the side or your favorite wing-style fixings.
Recipe Tips & Suggestions
- Don’t skip the chilling step – Letting the patties rest in the fridge helps them stay together better on the grill.
- Check your buffalo sauce heat level – Some brands are much spicier than others, so adjust based on your crowd.
- Grill or skillet both work – No grill? A cast iron skillet gives you a great sear and works just as well indoors.
- Toast the buns lightly – A warm, slightly crisp bun helps hold everything together and adds texture.
- Try different cheeses – Swap in pepper jack, blue cheese crumbles, or mozzarella to mix things up.
- Double the slaw for a side – It makes a great light salad and gives you more mileage out of the prep.
- No Grill? A cast iron or non-stick skillet over medium-high heat works well—just cook each side for about 6 minutes until the center is fully cooked.

My family loves grilling and since the weather has warmed up, we are definitely adding this to the menu. It will be a nice change from ground beef.
Love the tip about grating onions into the mix for moisture!
