Crispy Buffalo Chicken Wrap – Crispy chicken strips tossed with buffalo sauce and wrapped up with a creamy ranch coleslaw and blue cheese crumbles. A great lunch or easy dinner for the whole family!

Crispy breaded chicken that is tossed in spicy buffalo sauce, then wrapped up with crunchy slaw, ranch dressing, and blue cheese crumb.es. It’s quick to make, easy to customize, and perfect for lunch, or dinner.

What You’ll Need

  • Tortillas – you can use whatever your favorite wraps or tortillas are. You can use a low carb tortilla as well.
  • Broccoli Slaw – traditional shredded coleslaw mix works great too
  • Ranch Dressing – a bottle of store bought or Homemade Ranch Dressing works great.
  • Buffalo Sauce
  • Bleu Cheese Crumbles – optional
  • Crispy Chicken – I like to use store bought chicken tenders for this.

What kind of chicken you use is entirely up to you! I like to use chicken tenders, so you get that crunch. But it is great with leftover chicken, rotisserie chicken, grilled chicken or just about anything. Just toss with the buffalo sauce to coat and you are ready to go.

How to Make a Buffalo Chicken Wrap

  1. Make Slaw. In a mixing bowl combine the broccoli slaw mix with ranch dressing, mix until everything is well coated.
  2. Make Chicken. Heat chicken tenders according to the package directions. You can use the oven, air fryer, or toaster oven; whatever works for you! Toss the cooked chicken with buffalo sauce to coat.
  3. Assemble. Place a layer of coleslaw in the center and top with coated chicken and blue cheese crumbles if using. Fold over the sides and roll like a burrito.
  4. Serve. These are best served immediately. Serve with more buffalo sauce or ranch for dipping.

Recipe Tips & Tricks  

  • Chicken. I like my buffalo chicken to be crispy, so I am using a breaded chicken tender in this recipe, but you can use grilled chicken or whatever you have on hand.  Just toss with a little bit of buffalo sauce before assembling.  This is great with leftover or rotisserie chicken as well.
  • Coleslaw. I use ranch dressing to make this coleslaw quick and easy. You can use traditional cabbage coleslaw, but I think the broccoli slaw holds its crunch better in a wrap.
  • Blue Cheese. If you are a big fan of blue cheese you could use blue cheese dressing in place of the ranch in this recipe.
  • Storage. These are best served immediately because of the crispy chicken. The filling will get a little soggy from the heat of the chicken if you make ahead. If you are using leftover chicken or rotisserie chicken that works better if you want to make ahead. Wrap them tightly and store in the fridge for a few days.

Instructions 

  • Cook chicken tenders according to package directions
    4 chicken tenders
  • Mix together broccoli slaw and ranch dressing until well combined
    2 cups broccoli slaw, 1/3 cup ranch dressing
  • Heat flour tortillas in a paper towel in the microwave for 20 seconds. This helps to make sure they fold well and don't crack.
    4 Flour Tortillas
  • Toss cooked chicken tenders in buffalo sauce until well coated.
    1/4 cup buffalo sauce
  • Fill each tortilla with about 1/2 cup of slaw, 1 chicken tender and a few blue cheese crumbles
    1/4 cup blue cheese crumbles
  • Roll up and serve
