Crispy Buffalo Chicken Wrap – Crispy chicken strips tossed with buffalo sauce and wrapped up with a creamy ranch coleslaw and blue cheese crumbles. A great lunch or easy dinner for the whole family!

If you have been around here before, you know that my family eats a lot of Mexican food.  That means that we often have leftovers that I am turning into something new. Today I am sharing one of my absolute favorites.  This Buffalo Chicken Wrap is a staple in my week, and I have it for lunch probably at least twice a week. 

Mission Organics® Flour Tortillas are always in my pantry for tacos or quesadillas. And during the week I also use them to make great wraps for lunches.  You can do pretty much anything with them, but this buffalo chicken is my favorite.  I am a sucker for anything spicy!

What You’ll Need

  • Tortillas
  • Broccoli Slaw
  • Ranch Dressing
  • Buffalo Sauce
  • Bleu Cheese Crumbles
  • Chicken

What kind of chicken you use is entirely up to you! I like to use chicken tenders, so you get that crunch. But it is great with leftover chicken, rotisserie chicken, grilled chicken or just about anything. Just toss with the buffalo sauce to coat and you are ready to go.

How to Make a Buffalo Chicken Wrap

  1. This Buffalo Chicken Wrap starts with broccoli slaw that is tossed with ranch dressing so you get all the classic buffalo chicken flavors. But the slaw stays nice and crisp when you are eating it. 
  2. A few blue cheese crumbles are a must as well!  
  3. I like my buffalo chicken to be crispy, so I am using a breaded chicken tender in this recipe, but you can use grilled chicken or whatever you have on hand.  Just toss with a little bit of buffalo sauce before assembling.  This is great with leftover or rotisserie chicken as well.
  4. The tortillas have the best flavor if they are warmed, so wrap in a paper towel and microwave for a few seconds before assembling.
  5. Start by filling the tortilla with broccoli slaw, then a piece of chicken and a few blue cheese crumbles.
  6. Roll it up and enjoy!  Perfect to serve with Mission Organics Blue Corn Tortilla Chips for a quick lunch or easy dinner

Crispy Buffalo Chicken Wrap

Crispy Buffalo Chicken Wrap – crispy chicken strips tossed with buffalo sauce and wrapped up with a creamy ranch coleslaw and blue cheese crumbles. A great lunch or easy dinner for the whole family!

Ingredients 

  • 4 Mission Organics® Soft Taco Flour Tortillas
  • 2 cups broccoli slaw
  • 1/3 cup ranch dressing
  • 1/4 cup blue cheese crumbles
  • 4 chicken tenders
  • 1/4 cup buffalo sauce

Instructions 

  • Cook chicken tenders according to package directions
  • Mix together broccoli slaw and ranch dressing until well combined
  • Heat Mission Organics Soft Taco Flour Tortillas in a paper towel in the microwave for 20 seconds. (warming them is best for full flavor)
  • Toss cooked chicken tenders in buffalo sauce until well coated.
  • Fill each tortilla with about 1/2 cup of slaw, 1 chicken tender and a few blue cheese crumbles
  • Roll up and serve
