Cosmic Brownie Cookies – Super thick, soft, and decadent chocolate cookies topped with a chocolate ganache and rainbow sprinkles. Just like the classic brownies but in cookie form!

We all know that I love chocolate. It is my dessert of choice just about every, single time. When I was growing up Cosmic Brownies were pretty much a staple in my lunch box. These days if you have been to any of the popular cookie shops, they have had a Comic Brownie Cookie on the menu.

I have to say, I wasn’t super impressed, but was determined to make something even better at home! And these cookies are so decadent and delicious, I will take them any day over the store bought cookies.

Recently my son was at Crumbl Cookies and saw they had the Cosmic Brownie Cookie on the menu that week. He knows I love chocolate, so he decided to bring one home for me. It wasn’t bad, but it wasn’t my favorite either. It was very dark chocolate, kind of dry, not fudgy at all and just not what I was looking for.

So I took things into my own hands, and these are super chocolate-y, fudgy, rich, decadent, gooey and delicious!

What You’ll Need

  • Butter
  • Brown Sugar
  • Cocoa Powder
  • Milk Chocolate
  • Eggs
  • Vanilla Extract
  • Baking Powder
  • Salt
  • Semi-Sweet Chocolate
  • Heavy Cream
  • Rainbow Chips

Where Do You Get Rainbow Chips

The number one question I get asked when I share a cosmic recipe is where the topping comes from. You can find them in a lot of different places, you just need to know where to look. The ones I buy are from Betty Crocker or Wilton, and I can find them at my local grocery store (both my Safeway and Kroger stores carry them). But here are a few other options.

Alternatively you could use mini M&M’s or even just plain old sprinkles if that is all you had.

How To Make Cosmic Brownie Cookies

I love this recipe, because it is super easy and there is no mixer involved!

  1. In a mixing bowl, melt the butter and whisk in the cocoa powder until it is smooth and no lumps remain.
  2. In a separate bowl whisk the eggs, brown sugar and vanilla extract until it is pale and fluffy. This will take a minute or two to incorporate enough air into the eggs for them to thicken and get a little bit fluffy.
  3. Add the melted chocolate and the butter mixture to the eggs and mix until fully combined.
  4. Fold in the flour, baking powder, and salt until just combined. Be careful not to overmix, as soon as the flour streaks are gone, you are dong mixing.
  5. Scoop large balls for dough (about 3 Tablespoons) onto a baking sheet, and chill for 20 minutes.
  6. Slightly flatten the cookies, they will not spread much at all during baking, and bake for 11-12 minutes. The cookies will be completely set and just dry on the top. You do not want to over bake them or they will harden and dry out.
  7. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before removing to a wire rack to cool completely.
  8. Once the cookies are cooled, make the ganache by heating the heavy cream in a bowl for 30 seconds. Add the chocolate chips and let it stand for 1 minute. Stir until the chocolate is completely melted and smooth.
  9. Place the chocolate ganache in the fridge for 5 minutes before spreading it on the cookies. You want it to be cool enough it will not run off the cookies.
  10. Using a spoon, spread ganache over the top of each cookie and then sprinkle with the rainbow chips.

Storage

These are one of the cookies you want to enjoy within a day or two of baking them. They last for about 3 days when you cover and store them at room temperature. After that they start to dry about a little bit and are not quite as good.

If you have ever been to Crumbl or really any other cookie shop, you know they serve GIANT cookies! I personally like to make slightly smaller cookies, so that I can enjoy a whole one. Or maybe even 2 in one day! I did use my medium sized cookie scoop and slightly over filled it for these.

But if you want to make smaller cookies or even larger ones like theirs, you definitely can! I would just add 1-2 minutes if you go large and subtract 1-2 minutes if you go smaller to your baking time. Every oven is different, so you want to keep an eye on them no matter what. And as soon as they are look dry on top you can take them out.

Instructions 

  • In a small bowl mix together melted butter and cocoa powder until smooth and there are no lumps.

  • Add the melted chocolate and the butter mixture to the eggs and mix until fully combined.

  • Preheat oven to 350º F.
