Cajun Chicken Pasta – A creamy, spicy pasta dish made with tender chicken, fresh tomatoes, and a quick homemade Cajun-spiced sauce. It’s an easy weeknight dinner that brings bold flavor to the table in under 30 minutes.

We make a lot of pasta in my house, but this one always disappears fast. It’s creamy, a little spicy, and has just enough kick to keep things interesting without blowing anyone’s head off.

I usually reach for my homemade Cajun seasoning when I make this—it’s an easy way to control the heat and skip the store-bought stuff with mystery ingredients.

If you’re into recipes that feel like a cozy night in and something you’d order from your favorite restaurant, this one hits both. It’s quick, simple, and feels like more than the sum of its parts.

Plus, you don’t have to juggle ten ingredients or babysit a sauce for an hour—this all comes together in about the time it takes to boil pasta.

How to Make Cajun Chicken Pasta

  • Cook the pasta – Boil the spaghetti according to the package directions and set it aside once drained.
  • Sauté the chicken & onions – Heat oil and butter in a skillet, then add the seasoned chicken and minced onion, cooking until the chicken is browned and onions have softened.
  • Add garlic & build the sauce – Stir in the garlic briefly, then mix in the tomatoes, cream, Parmesan, and remaining seasoning. Let everything simmer until the sauce thickens slightly.
  • Toss with pasta & serve – Combine the cooked pasta with the sauce and chicken mixture, tossing until coated, then serve while hot.

Recipe Tips & Tricks

  • Use fresh Parmesan – Grating your own cheese melts more smoothly into the sauce and adds better flavor than the pre-shredded kind.
  • Cook pasta just to al dente – It’ll absorb more of the sauce without turning mushy when combined with the hot skillet.
  • Try it with penne or linguine – The sauce clings well to different pasta shapes if you want to switch it up from spaghetti.
  • Add some greens – Stir in a handful of spinach or kale at the end for extra color and nutrients.
  • Go spicy or mild – Adjust the amount of Creole seasoning to your taste. Add more for heat, or pull it back for a gentler flavor.
  • Don’t skip the simmer – Letting the sauce cook for a couple minutes helps it thicken and brings the flavors together.
  • Rotisserie chicken – Take a little shortcut and use precooked chicken. Just add to the sauce to heat it through.
