Chicken Chorizo Pasta – An easy creamy pasta dish with chicken and chorizo that is ready in just minutes! A little spicy, creamy, and delicious!

We all know that I am a big fan of Chicken Pasta, there are a ton of different recipes on the site already. But this one is quickly becoming a favorite. The chorizo adds so much flavor and is super easy to cook with.

You can find chorizo in just about any grocery store these days. I find it near the other sausage in my store. It is such a great way to add flavor without adding a lot of other ingredients.

What You’ll Need

  • Chorizo
  • Onion
  • Garlic
  • Chicken Breast
  • Diced Tomatoes
  • Italian Seasoning
  • Salt
  • Pasta
  • Heavy Cream
  • Parmesan Cheese

What Is Chorizo

Chorizo is a well seasoned, smoked sausage that is popular in Mexico and Spain. Most of the time it is made from pork, but you can find beef versions as well. Cacique is the brand that I find it most of my grocery stores, and it is not cured. So when you add it to the pan, you break it up like you would ground beef.

The Spanish version is cured, so if that is what you have available near you, you can slice those into disks to cook that way. Both give you great flavor and work well in this recipe, so use whatever your store carries!

How To Make Chicken and Chorizo Pasta

  1. Bring a large pot of water to boil and cook your pasta according to the package directions.
  2. In a large skillet add the chorizo to the pan, breaking it apart. Add in the onion, and sauté for 4-5 minutes until the onions are soft.
  3. Add in the chicken and brown for 4-5 minutes.
  4. Mix in the garlic and let it cook for just about a minute, until you can start to smell it.
  5. Add in the can of diced tomatoes, Italian seasoning and salt. Simmer for 7-8 minutes until the tomatoes are soft.
  6. Stir in heavy cream and Parmesan cheese and cook for a couple of minutes until the sauce starts to thicken.
  7. Toss with the cooked pasta until everything is well coated.
  8. Serve with additional Parmesan cheese if desired.

What Pasta To Use

You really can use any pasta that you like for this. I like to use a short cut pasta, so that you can easily get a little bit of everything in each bite. But really anything works.

You can use whole wheat pasta, the protein+ pasta, gluten free pasta, or any kind that you have on hand.

Recipe Tips

  • This is a great recipe to add more vegetables to, you can add bell peppers, peas and spinach would be a great addition to this pasta.
  • The recipe calls for heavy cream, which gives you a rich and creamy sauce that thickens nicely. But if you want to cut down on the fat and calories in the recipe, you can definitely use half and half or even milk. I would suggest whole milk, so it isn’t too watery.
  • It is best to slightly undercook your pasta by about 1 minute. When you toss the pasta with the sauce, it will continue to cook for a minute or two. So for the best results you want it to finish cooking with the sauce.
