These Microwave Potato Chips are crispy, crunchy, and completely fat-free! Made with just potatoes and a microwave, they’re a quick and healthy snack you can feel good about.

It is the middle of January, and I am sure some people have already thrown in the towel with their healthy eating resolutions. We all know that fruits and vegetables are part of a healthy diet. That includes red potatoes, which are naturally fat free and a good source of fiber. Plus, look at all the fun and yummy things you can do with red potatoes – like fat free potato chips!
Potato chips are a staple for a lot of people. It is pretty much a crime to have a sandwich without chips, in my opinion at least. They just go together! But when you are trying to eat healthier, a bag of potato chips isn’t always the best thing to have on your shopping list. Buying whole red potatoes, and making these fat free potato chips is a much better idea! They are super simple too. I honestly had my doubts, but they are darn good!

I have wanted to make these for years! I can’t even remember where I first saw them. I just know they have been in the back of my head forever. All you have to do is thinly slice red potatoes (skin off or on, it is up to you), and microwave them. You can toss them in a tiny bit of olive oil if you want, but not necessary if you line a plate with parchment paper first. I went simple and just seasoned with salt. But you could play with all kinds of flavors here, the possibilities are really endless. I don’t have a mandolin, so I used the side of my box grater, and it worked perfectly.


Fat Free Potato Chips
Ingredients
- 2 large red potatoes
- Salt or other seasonings
Instructions
- Thinly slice potatoes using a mandolin or the side of a box grater.
- Line a microwave safe plate with parchment paper.
- Arrange sliced potatoes in a single layer over the paper. Season with salt or other seasonings.
- Microwave on high for 3-5 minutes. Check after 3 minutes to see if they are starting to turn brown. Once golden, they are done.
- Remove from paper, and allow to cool completely. They will get crispier once they are completely cool.
- Repeat with remaining potatoes.

I’ve made this recipe with sweet potatoes but for some unknown reason, never thought to do it with red ones. Duh! I also love thick sliced potatoes baked in the oven.
