There is just something about making fresh pasta at home. Obviously it is over the top delicious and so much better than any of the dried stuff you can buy at the store. But once you are done, you realize just how easy it was and wonder why you don’t do it more often!
We first started making fresh pasta right out of college, and have not turned back! Don’t get me wrong, we use plenty of dried pasta, but special occasions definitely call for homemade.

A few years ago when we were in Italy I took an all day cooking class with Italian chefs. I learned how to make pasta with your hands, rolling it out with a long rolling pin, and then cutting and even filling little tortellini. It was an epic day I will never forget.
After we got home, I made pasta that way a few times, but I really like using the food processor to make it quicker, easier, less messy, and just more do-able. So if you have ever been intimidated, this is the method to try!

What You’ll Need
- Flour
- Eggs
- Water
Flour is the key ingredient in a tender pasta. In Italy they use “00” flour, which can be a little hard to come by in the United States. We actually brought a bag of flour back after our trip. But you know what? All-purpose flour works just fine! You will still get a perfectly tender and chewy noodle when you use all-purpose flour. So if your store doesn’t carry “00” flour, don’t spend an arm and a leg ordering it from a specialty store, just use what you have.

How To Make Homemade Pasta
- Add your flour to a food processor and pulse a few times to get the flour nice and fine and get rid of any lumps.
- Crack in your eggs and pulse for about 30 seconds. You want the mixture to start to come together in a loose dough.
- Through the top of the food processor, add water, only 1 teaspoon at a time until the mixture forms a ball. You have to be careful not to add too much water, or your dough will be too wet. So take your time and keep an eye on it.

- Remove the dough from the food processor and knead for 1-2 minutes on a clean and dry surface, until it is nice and smooth.

- Wrap the dough in plastic wrap and let the dough rest for 30 minutes.
- When you are ready to make your pasta gently flatten the ball of dough, and divide it into 2 pieces.
- Put it through your pasta roller at the widest setting. Fold the 2 ends of the pasta into the center, and place through the roller again. Repeat this step 2 more times.

- Move the pasta roller to the next setting, and continue to place the pasta through the roller, folding in half, and rolling 2 more times at each setting.

- Once you can see the outline of your hand through the dough, you have it thin enough and can cut into your desired. shape.

- Then you are ready to cook. The pasta only takes 2-3 minutes to cook in boiling water. Then serve however you want!

If you have ever had homemade pasta you know just how good it is. I know they sell those fresh pastas in the grocery store, but this is so much better! I like to really let the pasta shine, but you can really use it any way you would normally use pasta.
