Make Italian Subs at home, just like your favorite sandwich shop! Complete with a vinegar dressing and all the fresh toppings you desire!
Not much beats a really good sandwich. High quality bread, salty and spicy meats, fresh crisp veggies and a tangy vinegar dressing that ties it all together. Pure perfection!
You can find this sandwich on almost every fast food, sub restaurant chain menu. But if you have ever had it from a good deli, than you know just how good it can be!
This Italian Sub is loaded with multiple Italian style meats, lots of fresh veggies, sliced cheese and then it comes together with a red wine vinaigrette dressing. All of the flavors and textures just work so well together is it magic in every bite!
And the best part? Well there are a few really good things. But one is it is super EASY to make. Another is you can make it in literally just a couple minutes. And you can customize it using whatever meat, veggies, and cheese you like!

Red Wine Vinaigrette
- Olive Oil
- Red Wine Vinegar
- Red Onion
- Parmesan Cheese
- Garlic
- Dried Oregano
- Salt & Pepper
For the subs
- Sub Buns – see notes below for tips on the type of bread to use
- Salami
- Pepperoni
- Ham
- Cheese – I think Mozzarella or Provolone work best
Toppings
- Iceberg lettuce
- Tomato
- Red Onion
- Pepperoncini Peppers
How To Make Italian Subs
- Make Vinaigrette. Add all of the ingredients to a jar with a tight fitting lid. Place the top on and shake like crazy to get the vinegar and olive oil to emulsify together. Taste and adjust salt and pepper as necessary.
- Assemble Subs. Spread about 2 teaspoons of vinaigrette over each side of your sub bun. Layer the salami, pepperoni, ham and cheese on the bus. Top with lettuce, tomatoes, onion and peppers.
- Wrap. For the true deli experience, wrap sandwiches in parchment paper and slice in half if desired.
Recipe Tips & Variations
- If you like a hot Italian Sub sandwich, you can assemble these and before topping with the fresh veggies, place on a baking sheet in a 350º F oven for about 10 minutes to melt the cheese. Then remove and top as desired.
- The typical meats in an Italian sub are Italian style cured meats. So you really can mix it up and use whatever you enjoy. Salami, Prosciutto, Capicola, Mortadella, Pepperoni, and Sopressata are all great choices!
- If you want to make these ahead you definitely can, but it is best to add the fresh veggies at the time you want to serve them. They will get soggy if they sit on the sandwich.
- You can really use any type of vinegar you like for the dressing. White Wine Vinegar would be the best equal swap. Apple Cider will make the dressing just a touch sweeter.
- Provolone and Mozzarella are probably the two most common cheeses for an Italian Sub, but if you have another cheese you like, you can swap it out.
- For the lettuce, you really do want to use iceberg. It is crispy, crunchy, and shreds perfectly. Leafy greens are not going to give you the desired crunch.
What Kind Of Bread To Use
For most people the best results will come from a loaf of Italian bread from the bakery section of your grocery store. You can slice the size pieces you want and scoop out a little of the inside, if it is too doughy.
Depending on the area of the country you live in, you may be able to find Italian Hero Rolls, they are often 12 inches long. These will give you the most authentic deli style experience, but they are not widely available.
How To Serve
These are great served for an easy lunch or quick dinner. You can serve with a Tossed Salad, and Orzo Pasta Salad or keeping with the Italian theme this Tomato Mozzarella Salad is delicious.
You could also go with Fat Free Potato Chips to keep the deli experience going. Macaroni Salad or even Classic Potato Salad are also deli classics that you could absolutely make to go with these sandwiches.

Ingredients
Red Wine Vinaigrette
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1 Tablespoon grated red onion
- 1 Tablespoon Grated Parmesan cheese
- 2 teaspoons minced garlic
- 1 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
For Sandwiches
- 6 Italian Sub Buns
- 12 slices salami
- 12 slices pepperoni
- 12 slices deli ham
- 12 slices sliced provolone cheese
Toppings
- Iceberg Lettuce
- Sliced Tomato
- Thinly Sliced Red Onions
- Pepperoncini peppers
Instructions
Make Vinaigrette
- Add all of the ingredients to a jar or container with a tight fitting lid. Shake well, for 30-60 seconds to completely combine.
To Assemble The Subs
- Open the buns and arrange them on the counter in front of you.
- Spread about 2 teaspoons of the vinaigrette over each side of the buns.
- Layer with salami, pepperoni, ham and cheese.
- Top with shredded lettuce, tomatoes, thinly sliced onions and peppers.
- Close the subs. Wrap in parchment paper and slice if half if desired.
