Lemon Cheesecake Cones – Quick and easy no bake lemon cheesecake piped into a waffle cone and topped with lots of fresh strawberries! The perfect easy summer treat.

No bake desserts are a must for the summer. Anything to avoid turning on the oven and heating up the kitchen. These lemon cheesecake cones are light and refreshing and so easy to make. They are ready in minutes, and will disappear in no time.

The cones are filled with a no bake lemon cheesecake that comes together in no time. And then topped with lots of fresh strawberries. You can even mix the strawberries into the cheesecake filling, so you get berries in every bite!

What You’ll Need

  • Cream Cheese
  • Sugar
  • Instant Lemon Pudding Mix
  • Milk
  • Waffle Cones
  • Strawberries
  • Lemon Slices, optional garnish

Want more lemon flavor? Mix in a little lemon juice or lemon zest in with the cheesecake mixture. If you have lemon extract that works great too. These don’t have a super strong lemon flavor, so just taste and add more flavoring if desired.

How To Make Cheese Cake Cones

  1. In a large mixing bowl combine the cream cheese with 4 tablespoons of sugar. Beat well with an electric mixer until smooth and fluffy.
  2. In a separate bowl whisk together pudding mix and milk. Let it stand for 5 minutes.
  3. After 5 minutes, whip the pudding mixture into the cream cheese mixture.
  4. If you don’t have super sweet and juicy strawberries. Combine strawberries with the rest of the sugar and let them macerate and get juicy. If your strawberries are super fresh, you can skip this step.
  5. Next fill a piping bag or plastic storage bag with the cheesecake mixture. Cut off the top and pipe the filling into the cones.
  6. Top each cone with slices of strawberries and garnish with sliced lemon if desired.
  7. Place in the fridge and let them chill for one hour before serving!

Can I Make These Ahead

The cones will get soggy and soft if you fill them too much ahead of time. I like to only fill them about an hour before serving, so the cones are still crisp. But you definitely make the filling ahead and store in an airtight container in the fridge for up to 2 days before you fill the cones.

Can I Use Other Fruit

Absolutely! Blueberries and raspberries make a great substitute or addition to these. Whatever berries you have on hand work great. The fresher and more sweet the better. So just use whatever you like.

The possibilities for this are almost endless! You can use a different flavor pudding if you don’t want lemon. You could use No Bake Oreo Cheesecake as the filling and put them in chocolate waffle cones. Lots of fun twists you can do!

Ingredients 

  • 2 8 oz blocks cream cheese
  • 5 Tablespoons sugar, divided
  • 1 3.4 oz box instant lemon pudding mix
  • 1 cup cold milk
  • 1 cup chopped strawberries
  • lemon slices, optional garnish
  • 4 waffle cones

Instructions 

  • In a large mixing bowl combine the cream cheese with 4 tablespoons of sugar. Beat well with an electric mixer until smooth and fluffy.
  • In a separate bowl whisk together pudding mix and milk. Let it stand for 5 minutes.
  • After 5 minutes, whip the pudding mixture into the cream cheese mixture.
  • If you don't have super sweet and juicy strawberries, combine strawberries with the remaining 1 Tbsp of sugar and let them macerate and get juicy. If your strawberries are super fresh, you can skip this step.
  • Next fill a piping bag or plastic storage bag with the cheesecake mixture. Cut off the top and pipe the filling into the cones.
  • Top each cone with slices of strawberries and garnish with sliced lemon if desired.
  • Place in the fridge and let them chill for one hour before serving!

Notes

You can mix in chopped strawberries with the cheesecake filling, and just spoon into the cones if you want strawberries throughout the dessert instead of just at the top.
