Marry Me Chicken

Marry Me Chicken – sautéed chicken in a creamy sun-dried tomato sauce. A super easy recipe that will be sure to impress just about anyone!

Everyone always has chicken in the freezer. You pick up a few pounds when it is on sale, and it is just always here. But sometimes you need something new to do with it. Because let’s face it chicken can be kind of boring.

You need either a good sauce or lots of flavors to make chicken shine. Like Butter Chicken or Grilled Avocado Chicken. Well this has a sauce that takes it to a whole new level!

What Is Marry Me Chicken

Well, it is basically sautéed chicken that simmers in a creamy sun-dried tomato sauce. It is said to be so tender, juicy and full of flavor that the person you are serving it to will want to marry you. The other theory for the name is how well the flavors “marry” together. The cream, garlic, and sun-dried tomatoes make such a cohesive sauce that is decadent and delicious.

What You’ll Need

  • Chicken Breasts
  • Salt & Pepper
  • Olive Oil
  • Butter
  • Garlic
  • Flour
  • Chicken Broth
  • Heavy Cream
  • Parmesan Cheese
  • Sun-Dried Tomatoes – you want the ones that are in a jar packed in oil. You won’t use the oil for the recipe.
  • Red Pepper Flakes
  • Italian Seasoning
  • Fresh Basil

How To Make Marry Me Chicken

  1. Season your chicken evenly with salt and pepper. Add the oil to a large skillet and brown the chicken for a few minutes on each side. You don’t want to cook it through, just so it is nicely browned.
  2. Remove the chicken from the pan and cover with foil to keep it warm.
  3. Add the butter to the pan to melt. Once it is melted stir in the garlic and cook for 2-3 minutes until it is soft and fragrant. Stir in the flour and cook for a couple minutes, making sure that there are no white streaks remaining.
  4. Slowly whisk in the chicken broth and heavy cream until it is nice and smooth.
  5. Add in the Parmesan cheese, sun-dried tomatoes, red pepper flakes and Italian seasoning. Bring the mixture to a simmer until it starts to thicken.
  6. Add the chicken back to the pan, covering with the sauce. Cook for 5-10 more minutes, or until your chicken is cooked through, an internal temperature of 165º F.
  7. Garnish with fresh basil to serve.

What To Serve With Marry Me Chicken

It is great to serve over pasta or rice, because you want something to soak up all that delicious sauce! But here are a few other great options as well.

Storage

You can store this in an airtight container in the fridge for 3-4 days. You may need to add a splash of chicken broth or milk to loosen up the sauce when you reheat it. I just reheat in the microwave.

Cream sauces do not freeze the best, when they thaw they tend to break down and separate. So this isn’t one that I would recommend making ahead and having in the freezer.

Recipe Tips

  • One of the keys to making tender and juicy chicken is to make sure your chicken is all the same size, so you aren’t leaving all the pieces in there for longer than necessary because one piece isn’t done. I like to use thinly sliced chicken breasts for this recipe, because they are all about the same thickness, and cook quickly compared to a super thick chicken breast.
  • The key to knowing when chicken is done is to use a thermometer. So many people over cook chicken because they are worried they are going to under cook it. Take the guess work out, and measure the temp. As soon as it is 165º F, take it off the heat and serve, the chicken is 100% safe to eat.
  • You can use something other than heavy cream, but it will not be thick and creamy like this is meant to be. So just beware that it may be “want to go on a date chicken”.

Ingredients

  • 1 1/2 pounds thinly sliced chicken breasts
  • salt and pepper
  • 1 Tablespoon olive oil

  • 3 Tablespoons all-purpose flour
  • 1 cup low sodium chicken broth
  • 1 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • 1/2 cup sundried tomatoes packed in oi, drained and chopped
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon Italian seasoning
  • Fresh Basil for garnish

Instructions

  4. Reduce the heat to medium, add the butter to the pan to melt. Once it is melted stir in the garlic and cook for 2-3 minutes until it is soft and fragrant.
  5. Stir in the flour and cook for a couple minutes, making sure that there are no white streaks remaining.
  6. Slowly whisk in the chicken broth and heavy cream until it is nice and smooth.

Could you use a substitute for the heavy cream to cut down on fat/calories ?

Yep, you can use any lower fat milk product. It will just change how thick and creamy it is.
