Crockpot Fiesta Chicken – a deliciously easy Mexican flavored chicken dish with just a handful of ingredients you probably have in your pantry already! Great for salads, tacos, burritos and more!

Life is just busy, so it is so nice to have recipes that you can turn to that require so little effort, even the kids could make it for you! This is one of those recipes you just dump everything into the slow cooker, turn it on, come back and it is done.

The chicken is creamy, full of flavor, has a tiny bit of a kick, and is great to be used over Cilantro Lime Rice, or as a filling for tacos, burritos, quesadillas and more.

What You’ll Need

  • Chicken Breasts – you can use thighs if you want, but I find that they don’t shred up as well, so breasts just work better
  • Taco Seasoning
  • Black Beans – I like to drain and rinse my canned beans
  • Diced Tomatoes with Green Chiles (Rotel Tomatoes)
  • Green Chiles
  • Frozen Corn
  • Cream Cheese
  • Limes

Out of taco seasoning or want a homemade version? I love this Homemade Taco Seasoning because you can adjust the heat and salt level for what your liking is.

How To Make Crockpot Fiesta Chicken

  1. Pour the beans, tomatoes, green chiles and corn into the bottom of your crock pot.
  2. Arrange the chicken over the top and sprinkle with the taco seasoning.
  3. Break the cream cheese into a couple of pieces and place over the top.
  4. Put on the lid and cook on low for 4 hours.
  5. Remove the chicken from the crockpot and use forks to shred into pieces.
  6. Stir the chicken back into the sauce until everything is combined and the cream cheese is completely melted.
  7. Add just a little lime juice to brighten the flavor and serve.

Is This Spicy? Can I Make It Mild?

The nice thing about making this for yourself, is you can make it however spicy or mild you like. They sell Rotel tomatoes in mild, medium, and hot varieties these days. So pick whatever heat level you like. And if you really don’t like heat skip the green chiles. They don’t add a lot of heat, but they do at a little.

If you really like things spicy, make sure to pick the hot variety of tomatoes, and you could even add a little ground cayenne pepper as well when you add the taco seasoning.

How To Serve Fiesta Chicken

This is a super versatile recipe that you really can use a bunch of different ways.

Can I Make This Low Fat

Yes, you can definitely use low fat cream cheese in this recipe. That is the only thing that really has any added fat. You could even just leave out the cream cheese and have it be a little more “salsa” chicken than creamy.
