Peanut Butter & Jelly Baked Oatmeal – make single serve “baked” oatmeal in the microwave with the flavor of your favorite childhood sandwich!
Oatmeal is one of those go-to breakfasts for so many people. It is quick, easy, filling, and most of the time pretty good for you. Well today we have a Peanut Butter & Jelly Baked Oatmeal that takes less than 5 minutes.

Baked Oatmeal
Often times when you see baked oatmeal is makes a full baking pan, and you take out slices to serve it. For me, I love it warm, and I don’t necessarily want it sitting around for a couple days. So a single serve baked oatmeal is perfect! It comes together in the microwaves, so it is quick and easy.
Plus you can mix it up and flavor it other ways. Today I am using Peanut Butter & Jelly but you can really use any nut butter, mix in dried fruit or nuts and just get creative.
What You’ll Need For Baked Oatmeal

- Old Fashioned Oats
- Apple Sauce
- Milk – you can use any type of milk you want (almond, oat, skim milk etc)
- Vanilla Extract
- Sugar – Depending on the type of peanut butter you use, this is optional. And you can use honey, maple syrup, monk fruit, splenda, traditional sugar etc.
- Peanut Butter – any peanut butter works if you use a commercial brand (Skippy, Jif) you can go lighter or skip the sugar called for
- Jelly – whatever your favorite flavor is!

How To Make Peanut Butter & Jelly Baked Oatmeal
- Mix Dry Ingredients. Combine oats, salt, and sugar in a small bowl.
- Mix Wet Ingredients. Stir together milk, peanut butter, applesauce, and vanilla.
- Combine. Spray a small microwave safe bowl. Mix together the wet and dry ingredients and pour into prepared bowl. Gently swirl in about 1 tablespoon of jelly.
- Cook. Microwave on high for 2 minutes. Remove, and stop with additional jelly.
What Kind Of Oats To Use For Baked Oatmeal
I really prefer to use old fashioned oats for this microwave baked oatmeal. It stands up to the cooking process, gives a really good texture, is hearty and what I am looking for. That being said, you can use quick cooking oats if that is all you have or what you like. The cooking time will just change.
Using Quick Cooking Oats – Microwave for 1 minute
Using Old Fashioned Oats – Microwave for 2 minutes

How To Store Leftover Oatmeal
This is a large serving, so if you divide into two small bowls as well when you are cooking it. Cover any leftovers and store in the fridge for 2-3 days. When you are ready to serve just microwave for about a minute until it is warmed through.
Recipe Tips & Variations
- You can really use any liquid you like in this recipe. Almond milk works great if you want to cut back on calories. Whole milk works great if you want it thick and creamy. So use whatever you have and normally use to make oatmeal.
- Get creative with your jelly. Mixed Berry Jam is delicious or use whatever you have and enjoy.
- Not a fan of jelly? Skip the jelly and top with bananas instead. Peanut butter and banana is always a great combo.
- Add some chopped apple and cinnamon in place of the jelly for a delicious almost apple pie version.
