Pomegranate Bellini – A sparkling cocktail made with a pomegranate syrup and Prosecco. They are frizzy, refreshing and a fun way to celebrate!
In my family Bellini’s are the traditional cocktail on the holidays. We have been known to mix up the fruit in them, but I am partial to the pomegranate version, and that has become our go-to over the years.
Peach is the traditional flavor, but in the middle of winter I feel like pomegranates are more festive and seasonal.

What Is A Bellini
A Bellini is a traditional Italian cocktail that originate in Venice. The traditional version uses peach puree or nectar in place of the pomegranate juice that I use in this recipe.
This bellini drink makes a simple syrup out of the pomegranate juice so it is similar to the peach nectar of the original version. Then it is topped with a sweet prosecco for a fun and festive cocktail.

What Is The Difference Between A Bellini And A Mimosa
They are both drinks that involve champagne, but they are definitely not the same thing. Although a Mimosa is traditionally made with orange juice, there are plenty of varieties out there that use other fruits, like these Raspberry Mimosas.
The main difference is that a mimosa is made with juice, like orange juice. Where as a bellini is made with a syrup, nectar or actual fruit puree.

What’s A Pomegranate Bellini Made Of
- Sugar
- Pomegranate Juice
- Prosecco
This cocktail really is super simple to make! You are going to break it out anytime you have a reason to celebrate.

How To Make Pomegranate Bellini Drink
- The first step is to make the pomegranate syrup. In a small sauce pan bring the pomegranate juice (I like POM Wonderful) and sugar together to boil. Reduce the heat to low and let it simmer for about 15 minutes until it is nice and thick. Remove from the heat and let it chill.
- When you are ready to serve add a little bit of the syrup into the bottom of the glass and top with Prosecco.
You may have leftover syrup depending on how many drinks you make. You can pour it back into the juice bottle or into an air tight container and freeze. You could even dump it into ice cube trays to freeze, and then just take out what you need in the future.
If you have pomegranate seeds on hand, you could top each drink with a few as a garnish, but it isn’t necessary.

What Prosecco to Use For Bellini
This depends on if you like your cocktails on the sweet side. I usually buy the Kirkland Prosecco from Costco, because I think for the price it is a really good option.
- The pomegranate syrup already has some sweetness to it, so if you don’t like your drinks super sweet, pick a Brut Prosecco. This is the driest version of prosecco, so it isn’t sweet on its own and will balance the syrup nicely.
- If you like things sweet you can look for a Spumante. This is on the sweeter side and will give you a sweet cocktail.

Pomegranate Bellini

Pomegranate Bellini - A sparkling cocktail made with a pomegranate syrup and Prosecco. They are frizzy, refreshing and a fun way to celebrate!
Ingredients
- 1 cup Pomegranate juice
- 1 cup Sugar
- 1 Bottle Sparkling Wine (Spumante, Prosecco, any sweet variety)
Instructions
- Combine Pomegranate juice and sugar in a small sauce pan. Bring to a low boil. Reduce heat and simmer over low heat for 15 minutes. Cool.
- Pour about 1 Tbsp pomegranate syrup into the bottom of a glass, top with sparkling wine.
Notes
You can freeze any leftover syrup in an air tight container or into ice cube trays
