These easy Reuben Sliders are loaded with corned beef, Swiss cheese, sauerkraut, and creamy thousand island dressing. Perfect easy dinner or fun party idea!

Reuben Sliders are everything you love about a classic Reuben sandwich, made even better by baking them into warm, melty, crowd-friendly sliders. Buttery rolls are filled with layers of corned beef, Swiss cheese, sauerkraut, and thousand island dressing. They come together into one irresistible pan of sandwiches that disappears fast every single time.

These sliders are super easy to make and perfect for feeding a group, whether you’re hosting game day, or just want a fun dinner option. You can prep them ahead of time, bake them when you’re ready, and serve them hot and gooey straight from the oven. And if you have leftover Corned Beef it is the perfect use for it!

  • Slider Buns – I like to use the buttery Hawaiian rolls now the sweet ones, but you can use any buns that you enjoy
  • Corned Beef – you can find sliced or shaved corned beef at most deli counters
  • Swiss Cheese
  • Sauerkraut
  • Thousand Island Dressing – you can use your favorite store bought or try Homemade Thousand Island Dressing.
  • Butter
  • Dijon Mustard
  • Worcestershire Sauce
  • Garlic Powder
  • Dried Minced Onion
  • Caraway Seeds

Reuben Sliders

These easy Reuben Sliders are loaded with corned beef, Swiss cheese, sauerkraut, and creamy thousand island dressing. Perfect easy dinner or fun party idea!

Cook: 20 minutes

Ingredients 

  • 12 slider buns
  • 1/2 cup thousand island dressing
  • 8 slices Swiss cheese
  • 1 cup sauerkraut, drained
  • 1/2 pound sliced corned beef
  • 3 Tablespoons butter, melted
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried minced onion
  • 1/2 teaspoon caraway seeds, optional

Instructions 

  • Preheat oven to 350º F
  • Slice slider buns in half and place the bottom half in a casserole dish.

  • Spread thousand island dressing evenly over the buns. Top with slices of cheese.
    1/2 cup thousand island dressing, 8 slices Swiss cheese
  • Evenly spread the sauerkraut over the cheese and top with corned beef. Place the top bun over the meat.
    1 cup sauerkraut, 1/2 pound sliced corned beef
  • In a small bowl mix together melted butter, mustard, Worcestershire, garlic powder, dried onion and the caraway seeds. Brush over the top of the buns.
    3 Tablespoons butter, 1 teaspoon Dijon mustard, 1 teaspoon Worcestershire sauce, 1/2 teaspoon garlic powder, 1/2 teaspoon dried minced onion, 1/2 teaspoon caraway seeds
  • Loosely cover with foil and bake for about 20 minutes until the cheese is melted.
  • Remove from the oven and slice to serve.

How to Make Reuben Sliders

  1. Prep Buns. Depending on the buns you are using, some need to be sliced in half. So cut them in half and place the bottom half into a casserole dish. A 13×9 inch baking pan or slightly smaller works great.
  2. Layers. You can really put your layers in any order that you want. I start with the thousand island dressing, sliced cheese, sauerkraut, and then the corned beef. Once you have your layers all on, add the top buns.

  1. Topping. Mix together the butter, mustard, Worcestershire sauce, garlic powder, minced onion and caraway seeds. Brush over the top of the buns.
  2. Bake. Loosely cover with foil and bake for about 20 minutes. You don’t want the tops to get too dark, but you want the cheese to get gooey and melted.
  3. Serve. Remove from the oven and then slice and serve.

Recipe Tips & Suggestions

  • Caraway Seeds. These are optional, so if you don’t have any you can skip them. They do help give it more flavor since you don’t have the rye bread that a Reuben is known for. But they are still delicious without it.
  • Corned Beef. You can use leftover corned beef or you can get it from the deli, both work great! I love these or Corned Beef Hash whenever I have leftovers.
  • Buns. Hawaiian rolls are commonly used for sliders. They have a Buttery version that I like to use instead of the sweet ones. But there area also other brands out there, so use whatever you like!

Storage

If you have leftover Reuben sliders, store in an airtight container and place in the fridge for 3-4 days. They are great cold, or you can reheat in the microwave to remelt the cheese if desired.

    1. Both sound like great options – you really can serve with anything. I like something crunchy with sandwiches so chips or pickles is perfect. But you could serve with a salad or potatoes or anything you like.
