Crock Pot Creamed Corn – dress up your side dishes with this creamed corn. So much better than any canned stuff you can find. 

Do you have any side dishes that you just love? There are a handful at my house, like The Rice. But most of the time I am always trying to find something new. It can be next to impossible to get my family to eat vegetables. Do you have that problem? I like most vegetables, but I can’t get my guys to eat much of anything. So I am always trying new recipes and trying to get my guys to eat more.

Every year at my house we have “Special Corn” for Thanksgiving and Christmas. It is basically creamed corn that you top with Parmesan cheese. I decided to skip the last step and make it a little easier. Loaded Twice Baked Potato Casserole is also a staple on the holiday menu. And so worth every bit of work.

You could easily follow this slow cooker creamed corn recipe, and then transfer to a baking dish to top with cheese and broiler the last couple minutes to get the crispy crust, our “special corn” is known for. Don’t you love the descriptive name my dad came up with?  I am pretty sure my mom found the recipe in a magazine about 20 years ago and it was called Parmesan Crusted Creamed Corn, but over the years the name has changed.

This creamed corn recipe goes great with Tangerine Glazed Ham or your Thanksgiving turkey.  It even works with your barbecue ribs in the middle of summer!

How to make Creamed Corn

This crock pot creamed corn comes together in just minutes.  You really just mix everything together and cook in the crock pot for a few hours.  Could not be easier!  Cream cheese, butter and heavy cream are what you use to make the creamy and delicious sauce.

You could make on the stove top as well, just mix all of the ingredients together over medium heat and stir until everything is hot and bubbly.

I love the idea of making side dishes in the crock pot. Especially over the holidays. Anything to free up oven space or make the day a little easier is a must. Ingredients 

Instructions 

  • Mix together all of the ingredients, and pour into a slow cooker.
  • Cook on low for 4-6 hours, stirring every 2 hours to incorporate cheese.

    Love that you can prepare in the crockpot! Such a great side dish for anytime of the year.
    I bet you can freeze the left overs too.
