Recently I had the privilege of going with Princess Cruises aboard the Coral Princess through the Panama Canal. It was one of the best experiences I have ever had. I have always wanted to see the Panama Canal, but I really had no idea what to expect.

To see the canal up close, go through it on the ship, and then get a tour of the locks later was nothing short of amazing. The engineering that goes into it is mind blowing. So please, add it to your bucket list if it is not there already!

While we were in Panama, Sandra from A Dash of Sanity and I went on an excursion that was a tour of the locks, a boat ride through the rain forest and then ended with a short hike through the jungle. We were able to see sloths, lots of different birds, and some cool little frogs. Our guide was funny and super informative. And he even had treats for us.

Our guide Victor, gave us homemade banana muffins. I am not usually a banana dessert fan. We even talked about it at dinner a few nights. I like my banana bread with lots of extras. Like Peanut Butter Banana Bread. So when I got the muffin, I was hungry and knew I would eat it, but I didn’t expect to really enjoy it like I did.

So I think I need to open my mind and try a few more banana desserts. I am starting with these Banana Oatmeal Chocolate Chip Cookies. They are the perfect way to get banana flavor, with a few extras, in the form of a soft and chewy cookie.

These banana oatmeal chocolate chip cookies come together just like normal cookies do. They take just a little longer to bake, but are super tender and thick. I was a little worried they would spread thin because the dough was wetter than traditional cookie dough, but they stayed thick.

Banana Oatmeal Chocolate Chip Cookies

Banana Oatmeal Chocolate Chip Cookies - Tender and super moist chocolate chip cookies loaded with oats and bananas. Thick, chewy, and a fun new treat!

Ingredients 

Instructions 

  • Preheat oven to 350 degrees.
  • In an electric mixer cream butter and sugar together until light and fluffy.
  • Beat in egg.
  • Add banana and oats, mix well.
  • Mix in flour, baking soda, salt and cinnamon. Add chocolate chips.
  • Scoop about 1 1/2 inch balls of dough onto a baking sheet. Bake for 11-13 minutes until set and starting to turn golden brown.
  • Remove from oven and let cool for 2 minutes before removing to a wire rack.

    Actually I didn”t try it yet but I freak out when I saw you went on a cruise… I was on the same one but at the end of november, beginning of december… It was my first cruise ever and love it… looks like you had way more fun on your excursion in Panama…. Mine was boring at all and actually regret taking that one… Hope you didn’t had to wait for the ferry like we did…

    anyway I’m looking everywhere on your site for some idea… and saving some of your recipes since I probably won’t have internet this summer… thanks for your site! =D
