Chocolate Chip Cookie Pancakes

Chocolate Chip Cookie Pancakes – light and fluffy pancakes that taste like your favorite cookie! Top with chocolate chips, and whipped cream for a fun treat!

Pancakes are one of our favorite breakfasts to make and double or triple the recipe, so they are in the freezer just waiting for you on busy mornings. They are light and fluffy, and so easy to make.

Traditionally pancakes are made with regular granulated sugar, but these have butter and brown sugar to give them more of that cookie flavor. Plus chocolate chips take them to a whole new level!

What You’ll Need

  • All-Purpose Flour
  • Baking Soda
  • Salt
  • Brown Sugar
  • Butter
  • Vanilla Extract
  • Milk
  • Chocolate Chips

You really can use any kind of milk that you have. Buttermilk tends to make the fluffiest pancakes, but I have also made these with almond milk before and they work great.

  1. In a bowl whisk together flour, baking soda, and salt.
  2. In a liquid measuring cup mix together egg, melted butter, milk, brown sugar, and vanilla extract.
  3. Add the liquid ingredients to the flour mixture and mix until just combined.
  4. Fold in the chocolate chip until they are just incorporated.

Then you can go crazy with the toppings! These are cookie flavored, so topping them with chocolate chips, chocolate sauce and whipped cream just made sense to me! But you can use Maple Syrup, Strawberry Syrup or whatever you enjoy.

Make Ahead

Did you know you can make pancakes ahead of time? Skip buying the frozen pancakes in the grocery store and just make a double batch next time you make pancakes. First let them cool completely. Then arrange the pancakes on a large baking sheet and place in the freezer for a couple of hours until they are completely frozen. Store in a plastic food storage bag for 3-4 months.

When you are ready to reheat, you can microwave on a plate for 45-60 seconds until they are warmed through.

Ingredients 

Instructions 

  • Preheat griddle or large non-stick skillet to medium heat.
  • In a large bowl stir together flour, baking soda, salt, and brown sugar. 
  • Add butter, vanilla, and milk.  Stir until combined. 
  • Fold in chocolate chips. 
  • Using 1/4 cup measuring cup, pour batter into preheated pan.  Cook until the edges are starting to set, and bubbles are forming on the surface.  Flip, and cook for an additional 2 minutes.
  • Best served warm.
