Chocolate Chip Cookie Pancakes – light and fluffy pancakes that taste like your favorite cookie! Top with chocolate chips, and whipped cream for a fun treat!
Pancakes are one of our favorite breakfasts to make and double or triple the recipe, so they are in the freezer just waiting for you on busy mornings. They are light and fluffy, and so easy to make.
Traditionally pancakes are made with regular granulated sugar, but these have butter and brown sugar to give them more of that cookie flavor. Plus chocolate chips take them to a whole new level!

What You’ll Need
- All-Purpose Flour
- Baking Soda
- Salt
- Brown Sugar
- Butter
- Vanilla Extract
- Milk
- Chocolate Chips
You really can use any kind of milk that you have. Buttermilk tends to make the fluffiest pancakes, but I have also made these with almond milk before and they work great.

How To Make Chocolate Chip Cookie Pancakes
- In a bowl whisk together flour, baking soda, and salt.
- In a liquid measuring cup mix together egg, melted butter, milk, brown sugar, and vanilla extract.
- Add the liquid ingredients to the flour mixture and mix until just combined.
- Fold in the chocolate chip until they are just incorporated.
Then you can go crazy with the toppings! These are cookie flavored, so topping them with chocolate chips, chocolate sauce and whipped cream just made sense to me! But you can use Maple Syrup, Strawberry Syrup or whatever you enjoy.

Make Ahead
Did you know you can make pancakes ahead of time? Skip buying the frozen pancakes in the grocery store and just make a double batch next time you make pancakes. First let them cool completely. Then arrange the pancakes on a large baking sheet and place in the freezer for a couple of hours until they are completely frozen. Store in a plastic food storage bag for 3-4 months.
When you are ready to reheat, you can microwave on a plate for 45-60 seconds until they are warmed through.

I’ll take a big batch, or two of these!! Can I come over for breakfast?! 😉 I’m having the same issues with my oldest. I was sooooo not meant to be a teacher! They definitely do not have an easy job!
I love the dessert pancake trend! These look perfect! Maybe try letting your six year old count chocolate chips as tangible evidence for addition…and then talk about how with enough practice, they’ll just naturally remember the solutions. And when memorization does set in, celebrate with chocolate chip cookies…or more pancakes!
These look terrific! I don’t know how teachers do it, either….they certainly are a breed apart!
Yeah, these would disappear before they made it to the freezer. I used to keep homemade waffles frozen for a quick breakfast…I need to do that again! Great recipe, Erin!
I’m ready for my pancake breakfast! These look very good and I like the calorie count;-)
Yum I love chocolate chip pancakes but ones that taste like cookies even better.
What a great recipe! I freeze pancakes too. Make a big batch onthe weekend and freeze them for quick breakfast during the week. My daughter would love these, I’ll have to keep them in mind forr when I do another big batch.
Oh I just absolutely love pancakes, and these look incredible! Perfect for a long weekend. 🙂
