Dill Pickle Pasta Salad – if you like pickles, you are going to love this super easy, creamy and delicious pasta salad that has just the right amount of crunch!
Are you a fan of pickles? I feel like you either love them or hate, them and there is no in between. Well, if you are a fan of them, then this pasta salad recipe is just for you! I love pasta salad in the summer, it makes the perfect side dish, easy lunch, light dinner or take to a potluck.
There are a million different flavors you can make, but this Taco Pasta Salad is another favorite since I am obsessed with all things Mexican.
What You’ll Need
- Short Cut Pasta
- Dill Pickles
- Colby Jack Cheese
- Fresh Dill
- Mayo
- Sour Cream
- Cayenne Pepper
- Pickle Juice
- Black Pepper
I like to use baby dill pickles for this recipe, they have a great amount of crunch to give the pasta salad a nice texture. But you can buy already sliced dill pickles, if you want to take the short-cut and not have to deal with it.
How To Make Dill Pickle Pasta Salad
- Bring a large pot of water to boil and cook the pasta according to the package directions. Drain and rinse with cold water to stop it from cooking. This also helps it from sticking together. Set aside.
- In a bowl mix together the mayo, sour cream, cayenne pepper, fresh dill, pickle juice and black pepper to make the dressing for the salad.
- In a large bowl toss together cooked pasta, chopped pickles, cubes of cheese, dressing and fresh dill until everything is well coated.
- Store in the fridge, for at least 1 hour, until ready to serve.
Recipe Tips and Variations
You can mix up a few things to make this even more to your taste.
- Pasta – Use whatever shape pasta you want. Elbow macaroni, shells, rotini, penne etc. Anything you have and like works great.
- Cheese – I like to use Colby Jack, I think it is perfectly creamy and pairs well. But if you like cheddar or something else, use it! I like to cut cubes of cheese off the block for this. But you could easily use shredded cheese instead.
- Add Protein – You could definitely add cooked bacon or even grilled chicken to make this a full meal.
- Vegetables – Adding cherry or grape tomatoes, finely chopped onion, diced celery or even shredded carrots would be a great addition to this salad.
How To Serve Pasta Salad
Dill Pickle Pasta Salad is a great side dish if you are grilling or making just about anything. It is also the perfect addition to a potluck! Trust me, it will disappear quickly.
Storage
You can store in the fridge for up to 3 days. just make sure to cover it well, to help it from drying out. You will want to mix well before serving.
If you want to make ahead, I suggest making the dressing ahead of time and storing in the fridge. And then cooking the pasta and assembling the salad the day you want to eat it. The pasta does tend to absorb some of the dressing at it sits. So it is really best if you serve within 3-4 hours of making.
