Heath Toffee Bars – these English Toffee Bars have an almost brown sugar shortbread crust topped with crushed toffee and pecans for a delicious holiday treat!
When I think of holiday cookies there are a few flavors and things that come to mind, but toffee is high up on the list. I am a huge sucker for Chocolate Saltine Toffee to get that flavor and texture for sure. It is just so good!
These Chocolate Toffee Bars are a staple and a huge hit any time I made them. Once of the most requested for sure. But these Heath Toffee Bars are another favorite that we have been making for almost 20 years!
When I was in college I was given this Grandma’s Favorite Cookies cookbook. It was full of classic Christmas cookies just like grandma used to make. My grandma was an amazing baker, her Oatmeal Fudge Bars are still one of my favorites. But she never made anything like this before. So I knew it was a must make!
I am always drawn to anything with toffee, but crunchy, brown sugar flavored, buttery goodness just draws me in. These start with a cookie base that is almost like a brown sugar shortbread. Just simple so the toffee flavor shines through. Then you just bake and sprinkle with crushed candy on top. So simple to make you are going to wonder why you waited so long!
These English Toffee Bars are quickly become a holiday tradition in your house. Santa just might leave you extra presents if you set these out for him. They are great for cookie exchanges as well. Everyone loves toffee, so these will be a hit everywhere.
How to Make Heath Toffee Bars
- Start by using a mixer to cream together the butter, brown sugar, egg yolk and vanilla. Mix until smooth and creamy.
- Next you slowly mix in the flour until it is just combined.
- Using a spatula mix in the toffee bits and the pecan pieces. Just fold everything together until it is evenly blended.
- Press the batter into a baking sheet in an even layer.
- The bars bake for about 20 minutes until they are golden brown.
- Once you remove from the oven sprinkle with the crushed Heath bars. Some of the chocolate will melt and help everything stick together.
- Let the bars cool for about 10 minutes and then slice. This makes it so much easier to get out of the pan than if you let them cool completely.

Heath Toffee Bars
Ingredients
- 1 cup butter, softened
- 1 cup light brown sugar
- 1 egg yolk
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 cup Heath Toffee Chips
- 3 Heath Toffee Bars, crushed
- 1/2 cup pecans, finely chopped (optional
Instructions
- Preheat overn to 350 degrees.
- In the bowl of an electric mixer cream the butter well. Blend in brown sugar, egg yolk and vanilla. Slowly add in the flour, and mix until just combined. Fold in the 1 cup of Toffee Chips and pecans if using. Press dough into an ungreased 15x10 inch jelly-roll pan.
- Bake for 18-20 minutes, or until golden brown. Remove from oven, and immediately sprinkle with the crushed Heath Bars. Cool for 10 minutes - slice into bars. You can remove from pan to cool, or leave in the pan. But you want to cute while still warm, or they are very hard to cut through.
