Homemade Corn Tortillas – Mexican night just got better with these easy, just 3 ingredient homemade tortillas. So much better than store bought.

Recently I had the opportunity to go on a Caribbean cruise with Princess Cruises.  It was the best way to escape the cold and enjoy some sun in winter. I was on the Caribbean Princess, where we sailed the Western Caribbean.  

If you followed along on Instagram (here you can see the highlights) you may remember me raving about a meal in Cozumel. We did a fun excursion to the ruins of Tulum, swam in a cenote and had an amazing and authentic meal. It included chicken, pork, rice, beans, amazing guacamole, the freshest fruit, 2 different salsas and homemade corn tortillas. Which I immediately knew I had to make when I got home.

I have made Homemade Flour Tortillas before, but I am not sure how I have never made them with corn. I mean, taco night with Frozen Strawberry Margaritas and homemade tortillas sounds like the most perfect night. 

This corn tortilla recipe is super simple to make with just 3 ingredients!  You can’t get much better than that!  There is no resting time, because it isn’t made with traditional flour, so there is no gluten involved.  It really is just mix, shape and cook!

How to Make Corn Tortillas

You need masa harina corn flour to make homemade corn tortillas.  It really is just ground white corn that is fine like an all-purpose flour. Then you mix in a tiny but of salt for some flavor and then water.  I like to mix the dough together until it forms a ball, and then use my hands to knead the dough for a couple minutes until it is smooth. If it is sticky you can add a little more masa to the dough.  

Once your dough is ready, just divide into equal size portions, about the size of a golf ball.  The easiest way to form your tortillas is place a ball of dough in between a layer of plastic wrap.  Then use the bottom of a pot or pan to squish the dough down. If you have a tortilla press, break it out!  But it is definitely not necessary to make these. If you want it thinner you can use a rolling pin or your hands to flatten further.

How to Cook Corn Tortillas

Tortillas take just a couple minutes to cook.  You can cook a large batch of them at a time if you have a griddle.  Or just a few at a time in a large skillet.  Either way you start with a dry pan that is heated to a medium high heat.  Place the tortilla in the pan and cook for 15 seconds and flip.  Then cook for 1-2 minutes until it is starting to get golden brown spots.  Then flip and cook for an additional 1-2 minutes.  They are best served immediately. 

If you make them ahead, knowing how to heat corn tortillas is key.  I like to wrap in a towel to help keep the moisture in, and then microwave for 30-45 seconds. This gets them nice and warm and soft, perfect for taco night!

Can you Freeze Corn Tortillas

Yes, you definitely can freeze them. I like to stack them with a piece of wax paper or parchment paper in between them so they don’t stick together.  Then store in a freezer safe bag.  Then you just take them out about an hour before you are ready to use them.  They should thaw quickly on the counter, and then heat in the microwave to warm them before serving. 

I am so excited that I can bring part of the Caribbean cruise home with me, so that I can enjoy it any time.  Because Chicken Tacos have never been so good!

Homemade Corn Tortillas

Homemade Corn Tortillas - Mexican night just got better with these easy, just 3 ingredient homemade tortillas. So much better than store bought.

Ingredients 

  • 2 cups masa harina
  • 1/2 teaspoon salt
  • 1 1/2 cups water

Instructions 

  • In a large bowl mix together masa and salt.
  • Add 1 cup of water and mix. It will be similar to the texture of sand. Continue adding water until the dough comes together to form a ball.
  • Use hands to knead the dough for about 2 minutes until it is smooth.
  • Form into 12 equal size balls.
  • Place a ball of dough in between a layer of plastic wrap. Use a tortilla press or the bottom or a pan to flatten.
  • Heat a griddle or large skillet over medium high heat.
  • Add tortillas to the pan, heat for 15 seconds and flip. Cook for 1-2 minutes on each side until golden spots begin to form.
  • Remove from pan and best served immediately.

Notes

You can find Masa Harina in the baking aisle near the other flours in your grocery store.
