Instant Pot Pozole – a simple and comforting pozole recipe you can make in no time. It is super easy to make, loaded with flavor and a great Mexican inspired dinner.
I first learned about Pozole a few years ago, and it has become a huge favorite in our house. This Chicken Pozole was the first version I made, and have since adapted it for the pressure cooker and changed it up just a little.
This is a pork pozole is a hearty soup that is really pretty good for you, and you can make it with just a few ingredients you can have on hand at all times.
What Is Pozole
Pozole is a traditional Mexican style soup or stew. You will find both green and a red or verde and roja versions. Roja is usually made with dried chilies that are rehydrated and give the soup a bright red color. Verde is made with fresh green chilies that are roasted and then turned into a sauce.
It is usually made with some kind of meat, often chicken or pork, and hominy. And then you can top it with lots of different veggies and garnishes to bring it all together.
Hominy is made from corn kernels. Field corn kernels go through a chemical process of soaking in a solution that removes the hull. This process causes it to puff up to twice its original size. It is a traditional ingredient in many different Mexican dishes.
Pozole Ingredients
- Poblano Peppers
- Jalapeno Pepper
- Tomatillos
- Cilantro
- Olive Oil
- Dried Oregano
- Chicken Broth
- Pork Shoulder
- Hominy
- Salt & Pepper
How To Make Pozole
- The first thing to do is make the salsa verde that gives the soup the flavor. Toss the peppers and tomatillos with olive oil and season with salt and pepper. Place in a hot oven and roast for about 25 minutes until they start to char.
- Remove from the oven and cut off the stem and remove the seeds from the peppers. Pour the peppers and tomatillos into a blender or food processor. Add cilantro and oregano and process until mixture is smooth.
- To the pot Instant Pot add all of the ingredients, close the lid and make sure the vent is closed. Cook under high pressure for 45 minutes.
- Let the pressure cooker naturally release for 15 minutes before using the quick release to unlock it.
- Shred the pork and add back to the soup. Stir everything until it is evenly distributed.
- Serve with your desired toppings.
Making Pozole Ahead Of Time
This is super easy to make ahead of time and have either in the freezer or everything prepped and ready to make fresh.
To Freeze – simply let the soup cool completely and place in an air tight container in the freezer for up to 4 months. Thaw in the fridge overnight before reheating on the stovetop to serve.
Make Ahead – You can make the salsa verde ahead of time, and have just waiting for you in the fridge or freezer. It is great to make a double batch, and freeze half of it for a few months, and then pull out to make another pot of soup fresh.
What Kind Of Meat To Use
We like this pozole with pork, but you can follow the exact same instructions and recipe and use chicken if you prefer.
As for the type of pork to buy, you can use pork shoulder that you cut into chunks. Country style ribs are often on sale, and they work great as well. My grocery store has a package of pork shoulder that is cut into cubes that they call carnitas that works as well. You just want to cut whatever you have into about 2 inch chunks, so they will get tender and delicious as it cooks.
Is Pozole Spicy
You can choose how spicy or mild you want to make this. There are 2 jalapenos called for in the recipe, you can remove the seeds to make it mild, but if you want it even milder, you can reduce it to 1 without the seeds.
Poblanos are a mild pepper, so jalapenos are the only spice in the recipe. So without the seeds pozole really is not spicy.
What To Put On Pozole
You really can garnish your pork pozole with whatever your favorite taco toppings are. Here are a few of my favorites.
- Sliced Radishes
- Cheese
- Cilantro
- Avocado
- Tortilla Strips
- Shredded Cabbage
- Diced Tomatoes
- Sliced Jalapeno
- Lime Wedges
You can load up your soup with enough veggies to make it a filling and complete meal. Or you can make Flour Tortillas or even Cornbread to go on the side.

Ingredients
- 1 1/2 pounds pork shoulder, cut into 2 inch cubes
- 8 cups chicken broth, (low sodium)
- 1 Tablespoons olive oil
- 2 poblano peppers
- 1 pound tomatillos, husks removed
- 2 jalapenos, (seeded if you like mild)
- salt and pepper to taste
- 1 bunch cilantro
- 1 Tablespoon dried oregano
- 2 25 oz can hominy, drained
Instructions
- Preheat oven to 425º F.
- Toss poblano peppers, jalapeno peppers, and tomatillos with olive oil and season with salt and pepper. Place in a hot oven and roast for about 25 minutes until they start to char.

It will take probably 8 hours, just until the pork is pull apart tender.
