Parmesan Garlic Roasted Edamame – need a new way to get your kids to eat their vegetables? These soy beans are roasted until crispy and coated in Parmesan cheese. Great for picky eaters!
Edamame seems to be a very under used vegetable, but it really a favorite at our house. It is super simple to make, here I am roasting it with a little bit of olive oil and seasoning. It gets slightly crispy, or super crispy if you want it that way. And is just a versatile and easy side dish.

Most of the time when people think of edamame, I think they imagine it in the shell, like you find at an Asian restaurant. And that is great, and I always have those in my freezer as well! But this roasted edamame is just something different and so easy!
I like to add edamame to my salads or stir-fry, so it is something I always have in my freezer. And this garlic edamame is a staple at our house with just about any main dish.

- Frozen Shelled Edamame
- Olive Oil
- Parmesan Cheese
- Garlic Salt
You really can get creative and season with whatever spices you prefer. I kept this pretty basic, so that it goes with just about anything.

How To Make Roasted Edamame
- Season. Start with a bag of frozen edamame that I leave mostly frozen – no need to thaw. Just coat with a little olive oil, garlic salt, and Parmesan cheese.
- Roast. Heat in a very hot oven until golden brown and crispy.
- Serve. Then serve immediately with just about any dinner you are making.

My family can be picky about vegetables, we all like different things. But this roasted edamame is one we can all agree on! Edamame is good source of soy protein, is rich in fiber, antioxidants and vitamin K. So it is a healthy side dish that is easy to make and goes with just about anything!

Parmesan Garlic Roasted Edamame

- 14 oz frozen shelled edamame
- 1 Tablespoon olive oil
- 2 Tablespoons Parmesan cheese, grated
- 1 teaspoon garlic salt
Instructions
- Preheat oven to 450º F
- Toss edamame with olive oil until well coated.14 oz frozen shelled edamame, 1 Tablespoon olive oil
- Add Parmesan cheese and garlic salt and mix until everything is evenly coated.2 Tablespoons Parmesan cheese, 1 teaspoon garlic salt
- Pour onto a baking sheet.
- Bake for 18-20 minutes or until golden brown. You will want to flip the edamame after about 10 minutes.

How do you keep these, can you store them once they’re cooked? In a container in the fridge maybe? That is of course, if there are any leftovers. Bought a bag of edamame today. Can’t wait to try these!
Sorry for the slow reply, I was out of town and didn’t see this. Yes, I store in an air tight container in the fridge. You can then reheat in the microwave (they won’t be as crispy the 2nd time around) or put them in the oven again for a few minutes to crisp them up a little. Enjoy!
