I can’t believe it is time to start thinking about back to school. I know some schools in part of the U.S. have already started. We normally would go back next week, but we have an extra week this summer. I am seriously soaking up that time! I thought this summer was going to drag on and my son would be bored. We took our big vacation in March when we went to New Zealand, so it was just a trip to see the grandparents in WI this summer. Also, I only had him in 1 camp for a week. But somehow we have been busy. Last minute we enrolled him in tennis lessons, trips to the pool, playing with friends, and trips to the mountains on the weekend….we have been going like crazy. So I am not actually ready for my son to go back to school yet!
Going back to school also means having to think of lunch box ideas and after school snacks. I want him to have something he is going to like, is fun, but also is something I feel good about giving him. That is part of the reason why I am so excited about the announcement General Mills made this summer. Did you hear it? They are eliminating all the artificial flavors and colors from artificial sources from their cereals! More than 60% of the cereals are already there, like Cinnamon Toast Crunch used in this S’mores Snack Mix, and they are working on the rest. Plus General Mills cereal does not contain high fructose corn syrup, and all of their cereals have at least 10 grams of whole grain per serving. So even though I am giving my son some chocolate, I can feel better about the rest of it!
This S’mores Snack Mix is super simple to make, and it is a huge hit! My son has pretty much eaten this entire batch on his own (granted it has taken him awhile). But he is obviously obsessed. Cinnamon Toast Crunch is one of my families favorite cereals, so it seemed like the perfect base for a fun twist to put on s’mores. Then you add a few marshmallows, broken up chocolate, and then get it all to kind of stick together by drizzling a little melted chocolate over the top. S’mores snack mix is great to put in your kids lunch box, have around for an after school snack, or even when those late night chocolate cravings strike!

Ingredients
- 5 cups Cinnamon Toast Crunch Cereal
- 2 1/2 cups mini marshmallos
- 2 chocolate bars, , broken up
- 6 oz milk chocolate, , melted
Instructions
- Spread Cinnamon Toast Crunch into an even layer on a large baking sheet. Sprinkle marshmallows and the broken chocolate bar over the cereal.
- Drizzle the melted chocolate over the layer of marshmallows. Allow to cool completely, about 2 hours.
- Gently break apart and store in an air tight container.

Hooray for dye free cereals from General Mills! This S'mores snack would be a hit for any classroom! Great idea!

it is probably a good thing this cereal is unavailable in Australia - otherwise I would make this and eat my bodyweight in it :)
