Taco Meatballs

These Taco Meatballs are a Tex-Mex combo that is full of flavor, ready in minutes, cheesy, and can be served as dinner or an appetizer.

I have always been a sucker for meatballs. When I was growing up my mom made Porcupine Meatballs often and they were one of my favorites. I have since gotten creative and love Korean Meatballs, Instant Pot Meatballs, or Cheesy Sausage Meatballs are another hit.

These meatballs could really not be much easier to make. They take 3 ingredients, that is it! And you can really mix up the protein to whatever you have. I used ground turkey, because that is what we usually have on hand. But ground beef or ground chicken would both work equally as well and not change the recipe at all.

Chicken Taco Burgers follow this same idea, without the cheese filling. So it is great year round!

What You’ll Need

  • Ground Turkey – really any ground meat will work great here.
  • Taco Seasoning – a store bought packet or Homemade Taco Seasoning is perfect here.
  • Shredded Cheese – I used cheddar, but you could use a Mexican style blend, Pepper Jack, Monterey Jack or whatever your favorite is.

How To Make Taco Meatballs

  • Mix. In a mixing bowl mix together ground turkey, taco seasoning and cheese. Use your hands to make sure everything is evenly combined.
  • Shape. Using about 2 tablespoons of the meat mixture, shape into meatballs and place on a baking sheet.
  • Bake. Bake for about 12 minutes until the meatballs are browned and cooked through. You will have cheese that has melted and coming out of the meatballs. Just scoop it up and serve it with them!

Recipe Tips & Suggestions

  • Use a cookie scoop. It is my favorite thing to use to scoop out the meatballs. It ensures they are all the same size, and then they will bake at the same rate. Roll into a nice ball after you use the scoop.
  • Don’t use too much cheese. I know, there really isn’t such a thing as too much cheese, but when you are baking the meatballs there is. It will melt and the fat from the cheese will just create a greasy mess. So if you love cheese, just sprinkle more on after they bake!
  • Oven or Stovetop. This recipe does call for baking the meatballs, but you really can make them in a large skillet on the stovetop if you prefer. This will actually get them browned and crispy on the outside as well.
  • Use your favorite protein. You really can use any protein you like for these. Ground turkey, beef or chicken are my favorite. But you could also do a combo of beef and pork for these as well.

How To Serve

These Taco Meatballs are super simple with just 3 ingredients, but they are super versatile and you can serve them with Restaurant Style Salsa or Guacamole as an appetizer. Serve with Spanish Rice or Cilantro Lime Rice for a main dish.

They would even be fun to serve in a tortilla as a taco filling. You could serve Homemade Refried Beans or Black Bean Dip alongside and have a delicious meal.

Storage

If you have leftover meatballs you can store in an airtight container in the fridge for up to 4 days. Just reheat and serve as desired.

Instructions 

  • Preheat oven to 450º F.
  • In a bowl combine ground turkey, taco seasoning and cheddar cheese. Mix well.
  • Scoop about 2 Tablespoons of the meat mixture and roll into balls. Place on a baking sheet.
  • Bake meatballs for 10-12 minutes until golden brown and cooked through.
  • Remove from oven and serve with guacamole or your favorite salsa.

  2. I know how you feel your team is your team win or lose. I’m a Missed placed Texan living in Seattle. So you can only Imagine my pain around all these Seahawks. lol Houston Texans are my Team, but I will say I do like the Vickings I have family there as well. Anyway I’ll be making these Taco Meatball Skewers this weekend or next. It fit’s with the Texas theme Tex-Mex and all. 😉
