Taco Spaghetti – a tasty Mexican inspired dinner that is ready in minutes. Creamy and cheesy spaghetti in a flavorful meat sauce. And easy weeknight recipe the whole family will love.

You know that I am all about a quick and easy weeknight dinner. And if it can involve Mexican flavors that makes it even better! I love a good one pan meal, but for this one I cooked the pasta and sauce separately to ensure it got extra creamy and the pasta was cooked perfectly.

If you are really looking for a one pan dinner this Taco Pasta Skillet is my go-to. It is slightly different, but equally delicious. And you could use any cut of pasta that you like.

Why You’ll Love Taco Spaghetti

This is such an easy recipe that you can make in under 30 minutes any night of the week. It has just a handful of ingredients, but it has so much great flavor! Plus you can use store bought taco seasoning or Homemade Taco Seasoning to make it your own.

What You’ll Need

  • Ground Beef
  • Onion
  • Garlic
  • Rotel Tomatoes
  • Taco Seasoning
  • Sour Cream
  • Cheddar Cheese
  • Spaghetti

How To Make Taco Spaghetti

  1. Start by bringing a large pot or water to boil and cook pasta according to the package directions. Reserve 1 cup of the cooking liquid.
  2. In a large skillet brown ground beef and onions together over high heat until cooked through. Drain any fat from the pan. Add the garlic and cook for 1 minute, until you can start to smell it.
  3. Add in the Rotel tomatoes and taco seasoning. Stir until it is well combined, bring to a simmer and cook for 3-5 minutes.
  4. Once the pasta is cooked, remove the beef from the heat and stir in sour cream and cheddar cheese. The beef mixture will be quick.
  5. Add the pasta and enough of the reserved pasta water to get everything to come together and be nice and creamy.
  6. Serve immediately.

What To Serve With Taco Pasta

Recipe Variations

There are lots of ways to mix this up and make it your own!

  • Pasta – This recipe calls for spaghetti, but you really can use any cut of pasta or noodle that you like. Linguine, Penne, Rotini, or even bow-tie pasta would be delicious.
  • Toppings – Similar to Mexican Rice Skillet you can top this dish with whatever your favorite taco toppings are. Top with black olives, diced avocado, tomatoes, cilantro, jalapenos or whatever else you like!
  • One Pan – you can make this as a one skillet meal if you like. Just add about 3 cups of water or chicken broth and the spaghetti to the pan when you add the tomatoes. Everything will simmer together, covered, for about 12 minutes until the pasta is cooked. The remove from the heat and stir in the sour cream and cheddar cheese.

Recipe Tips

The biggest tip for making this recipe is to make sure to remove it from the heat before you stir in the sour cream. When you stir in sour cream over heat it can break and look curdled. If you remove from the heat first, this helps to keep it creamy and not separate.

If you like things spicy you can use hot Rotel tomatoes or even add in diced jalapeno when you add the garlic. If you like it mild, you could even use just diced tomatoes instead.

Storage

Got leftovers? Store any leftovers in an airtight container for up to 4 days. When you reheat it, I like to add a tiny splash of milk to keep it from drying out and help loosen up the pasta.
