Today is Mexican Independence Day! I am super excited to see all the #SundaySupper recipes today. I am a huge fan of Mexican food, so I can’t wait to go through the 50+ recipes below. This group is full of some amazing talent, so I know you will be blown away too.
I kind of cheated here. I didn’t make the tamales. They are on my list of things to try one day, but just haven’t gotten there yet. We have a few really great stands at our farmers market that sell tamales, salsas, hot sauces, and more. We sampled tamales at one stand, and immediately picked up some to bring home. Word to the wise…when the Mexican woman tells you they are spicy, you might want to listen.
Also at the farmers market they have fresh roasted hatch green chilis! I have never had a hatch chili pepper before moving to Colorado, but I have read a lot about them and see them in lots of recipes. I decided to try them in a green chili sauce to serve over our tamales. Again, when they say hot, they mean it! You don’t have to use hatch chili’s for this. I think jalapenos, poblanos, anaheims, and many more would work well too.
- 2 tsp olive oil
- 1/4 cup onion, , diced
- 2 cloves garlic, , chopped
- 13 oz roasted peppers, , peeled and chopped
- 1 cup chicken stock
- 1 tsp salt
- 1/2 tsp cumin
- 1/4 tsp black pepper
- In a large saucepan heat olive oil over medium-low heat. Saute the onions and garlic until soft and translucent.
- Add the peppers and the chicken stock. Bring to a boil, and simmer for about 15 minutes.
- Stir in the salt, cumin, and black pepper.
- Remove from heat, and using an immersion blender (or regular blender) puree until smooth.
