Cheese Quesadilla – cheesy, crispy and warm quesadilla loaded with your favorite cheese. Ready in about 10 minutes, so it is perfect for a quick and easy meal any time!

I don’t know about you, but we always have a few things in our fridge. Two of them are cheese and tortillas. Quesadillas are one of my quick go-to meals when we have nothing planned or just have odds and ends that need to get used up.

This is a simple cheese quesadilla, but you can dress it up and add your favorite veggies, whatever leftover protein you have or just enjoy it as is! These Chicken Bacon Avocado Quesadillas are one of my all time favorite combos.

Why You’ll Love This

  • Meals don’t get much easier than this. It really is just 3 ingredients – tortillas, cheese, and some kind of fat. I like to use olive oil, but butter, avocado oil or any other oil you like works to get the tortillas crispy.
  • Great way to clean out the fridge. You can add any veggies that you like, leftover chicken from last night, or really anything else to a quesadilla.
  • Customize without being a short order cook! Everyone in the family can build their own, and it isn’t any extra work for you. So let your kids pick their filling and their cheese and make their own.

What Is A Quesadilla

A quesadilla is basically a Mexican version of a Grilled Cheese Sandwich. It is a tortilla that is filled with cheese, and other ingredients, that is then fried until crispy and golden brown.

What You’ll Need

  • Tortillas – I like to use flour tortillas for quesadillas. I just think they taste better and get nice and crispy. Corn definitely works though, so if that is all you have or just what you like better, go for it!
  • Cheese – get creative and use whatever your favorite is. For these I used cheddar cheese and a little pepper jack for some spice. But anything goes!
  • Oil – You want to brush the outside of the tortillas with a little oil to help them crisp up. I use olive oil, but you can use butter or any oil you like to cook with.

How To Make Cheese Quesadillas

  1. Start by arranging the tortillas on a plate or board in front of you. Then layer in your cheese. You want to put a fair amount of cheese, filling all the way to the edge.
  2. Place the top on, and brush the top with oil.
  3. Get a skillet or griddle hot and spread oil or melt butter in the pan.
  4. Place the quesadilla into the hot pan (oiled tortilla still on the top) and cook for 3-5 minutes until the bottom is nice and crispy.
  5. Carefully flip and cook for an additional 3-4 minutes, until it is crispy and the cheese is melted.
  6. Remove from the pan and cut into triangles to serve.

What Goes With Quesadillas

You really can serve a cheese quesadilla with anything, as it is a pretty blank canvas. Refried Beans are a great side dish or my favorite Spanish Rice is another good idea.

I like to have a couple things to top or dip them in for sure.

Best Cheese For Quesadilla

If you are in Mexico you would probably find a quesadilla served with queso de Oaxaca. It is a mild white cheese that melts very easily. It could be compared to Mozzarella cheese in the United States.

But I think that any cheese that you like works great, and is the best cheese for a quesadilla. The real criteria you want to use is, does it melt well. Because that is really all you are going for is a crispy tortilla with gooey melty cheese inside. Here are a few great options.

  • Cheddar Cheese
  • Monterey Jack Cheese
  • Pepper Jack Cheese
  • Colby Cheese
  • Mozzarella Cheese

Storage

Quesadillas really are best eaten the day they are made, but you can definitely reheat them. Store in an airtight container in the fridge. Then when you are ready to reheat, you can microwave for 30-45 seconds to get the cheese warm. And finish in a hot skillet to help get the tortilla crispy again.

  • Heat a large skillet or grilled to medium high heat.
  • Meanwhile, arrange 4 of the tortillas on a plate or board in front of you. Then layer in your cheese. You want to put a fair amount of cheese, filling all the way to the edge.
  • Place the remaining 4 tortillas on top, and brush the top with oil.
  • Drizzle oil onto the hot cooking surface.
  • Place the quesadilla into the hot pan (oiled tortilla still on the top) and cook for 3-5 minutes until the bottom is nice and crispy.
  • Carefully flip and cook for an additional 3-4 minutes, until it is crispy and the cheese is melted.
  • Remove from the pan and cut into triangles to serve.

Notes

You can use any cheese that you like. Cheddar Cheese, Monterey Jack Cheese, Pepper Jack Cheese, Colby Cheese, and Mozzarella Cheese all work very well.
