Coconut Lime Quick Bread – soft and tender coconut bread with hints of lime, topped with a lime glaze and flakes of sweetened coconut.

Quick bread recipes are some of my favorite things to make. I love that you can use up things you have around the house to make a great treat with your coffee or for breakfast. Most people think of banana bread or maybe pumpkin bread when they think of quick bread, but there are more options out there!

I have quite a few banana bread recipes on my site, because I always seem to have bananas to use up.  But today we are going out of the normal and using coconut and lime! Coconut lovers will jump at this quick bread!

I actually made a coconut banana bread a couple years ago.  You may not think of coconut first when you are making quick bread, but that should change!  You can use flakes of coconut as well as coconut oil, to give it that great taste.  In this recipe you could even use coconut milk in place of the regular milk. It all works!

This coconut bread is super moist and dense. It is not light and fluffy like some loaf cakes or bread. You get lots of lime flavor from the juice and the zest as well!  So it is like a taste of summer and the tropics all in a quick bread recipe you can make at home.

What You’ll Need

  • All-Purpose Flour
  • Baking Powder
  • Salt
  • Granulated Sugar
  • Milk – really any type will work, dairy or non-dairy
  • Eggs
  • Coconut Oil – could use butter or another oil as well, the coconut oil just helps add to the coconut flavor
  • Coconut Flakes – I like to use sweetened for this
  • Limes
  • Powdered Sugar

How To Make Coconut Lime Bread

  • Mix Dry Ingredients. In a large bowl mix together flour, baking powder, salt, and sugar together.
  • Mix Wet Ingredients. In a separate bowl whisk together milk, eggs, and coconut oil until well blended.  Add to flour mixture and stir until just combined. 3
  • Combine. Add the flour mixture to the milk mixture and stir to combine. Mix in coconut flakes, lime zest, and juice.  Mix until just blended. 
  • Bake. Pour the batter into prepared pan. Bake for 50-60 minutes until a tester comes out clean.
  • Cool. Remove from oven and let stand for 10 minutes before removing from the pan and placing on a wire rack to cool.
  • Make Glaze. Once bread has cooled completely, prepare glaze. In a small bowl mix powdered sugar and lime juice until smooth. Drizzle over the top of bread. 
  • Garnish. As soon as you drizzle over the glaze, sprinkle with shredded coconut and lime zest. Let glaze harden before slicing.

To make this coconut bread extra special it is topped with a lime glaze!  Who can turn down a slice of bread that has a glaze on it, right?  I mean that is like getting to have frosting for a snack or for breakfast. The glaze is a simple mix of powdered sugar and lime juice.  Then you just drizzle over the top.

I like to let the glaze set up before I slice the bread, because otherwise it gets a little messy.  But if you don’t mind that, go for it and dive right in.  The smell of coconut and lime in your kitchen may be hard to resist.

Anything with coconut just makes it feel like summer, even when it is cold outside.  These Pineapple Coconut Cupcakes are another one I jump at when it is cold outside, and I want to pretend I am some place warm.

Coconut Lime Bread

  • Zest of 1 lime
  • 2 tablespoons sweetened shredded coconut

Instructions 

  • Preheat oven to 350°F. Line a 9×5-inch loaf pan with parchment paper, or spray with non-stick spray. Set aside.
  • In a large bowl mix together flour, baking powder, salt, and sugar together.
  • In a separate bowl whisk together milk, eggs, and coconut oil until well blended. Add to flour mixture and stir until just combined.
  • Mix in coconut flakes, lime zest, and juice. Mix until just blended. Pour into prepared pan. Bake for 50-60 minutes until a tester comes out clean.
