Creamy Sausage & Artichoke Pasta makes an easy weeknight dinner. A quick and easy meal the whole family will devour.
I am pretty sure the way to my heart is with a big bowl of pasta. If I could have a comforting creamy pasta every night for dinner I would be happy! And if it could have sausage and artichokes, even better!
Easy dinners are kind of my favorite thing to make. I love coming up with new ways to get dinner on the table fast using ingredients I already have in my pantry and freezer. And this is one of those comforting dinners that you just might not expect!
I always have jars of artichoke hearts in my pantry for making Hot Artichoke Dip, adding to Pasta Salad or to throw in salads or other recipes. And I have to say Italian sausage and artichoke hearts are a match made in heaven!
How to Make Sausage & Artichoke Pasta
- The first thing is to cook the pasta you are using according to the package direction. You can use any short cut pasta that you have; penne, rigatoni, rotini, ziti etc.
- Next you cook the sausage, onions, and garlic together until everything is browned and the onions are soft.
- Add the chopped artichokes, and mix to combine. You can use whatever artichokes you have. I like to use a jar of grilled artichoke hearts for more flavor.
- The sauce is super easy to make. All you do is combine half-and-half (you can use heavy cream here if you have it), butter, Parmesan cheese, black pepper, and red pepper flakes. And pour into sausage mixture. Then just heat it until it starts to simmer.
- Finally toss in the cooked pasta and stir it all together. You can season with additional salt and pepper if desired and dinner is done! We like to top with additional Parmesan cheese when serving.

Winter does NOT sound like fun to me. At all. But if it means I get to eat plate after plate of this pasta…hmmm. I might be convinced to endure it.

Pasta with sausage is like a weekly event for me as soon as the weather turns cooler. I love the idea of adding artichokes, too — thanks!
Karen @ The Food Charlatan says
This sounds amazing Erin! Artichokes have such a unique flavor. I’ve never paired it with sausage but that sounds so good! It is still practically summer weather here in California. I’m itching for wall, but I’ll take this over the snow 🙂
Jocelyn @BruCrew Life says
I am definitely not ready for the winter weather to be here!!! Chilly fall temps…yes! Cold, freezingness…no!!! But pasta dinners this good…heck yes!!! This looks amazing!
Brianne @ Cupcakes & Kale Chips says
This is definitely my kind of pasta dish! You know, I’m kind of tired of 80 degrees, but not ready for full on winter yet, either.

This recipe combines 3 of my most liked foods. Awesome!
Kim+Beaulieu says
You complete me. This is sheer perfection.
Also I dislike altitude. The last time I visited Alberta I did not stay hydrated enough and ended up in the hospital. No fun.

Half-and-half is not listed in the ingredients

Sally, it has been updated. I am not sure what happened and why it was missing, but it is in ther enow.

made this tonight. Recipe doesn’t specify, but I drained the sausage after browning it and drain the artichokes. The grilled artichokes I used, and all the ones I have seen, are packed in oil. Use a Campanelli pasta as that’s what I had on hand…and asiago since I was out of Parmesan….fabulous! Sounds like your winter experience may have been in Leadville Colorado. That’s where we got married. Which was pretty convenient because I can blame the thin air for my decision!
Erin S says
Yes – good notes that should be added to the recipe. Thanks for pointing that out.
Glad that you enjoyed it, it is one of our favorites! We were near Leadville, gotta love that area of CO!
