Greek Vinaigrette – a super simple homemade dressing with all your favorite Greek flavors. Great on pasta salad, side salads or even a Greek style salad.
There is just something about Greek and Mediterranean flavors that gets me every time. It can be Gyros or a Greek Salad, but the freshness, the herbs, and the flavors just blend so well together.

This Greek Vinaigrette is super simple to make, you just need a handful of basic ingredients and a container with a tight fitting lid, so you can shake it really well to combine.
Homemade salad dressings are so easy to make, and they are so much better than the bottled stuff! This Creamy Balsamic Vinaigrette is a definite staple for our whole family.

What You’ll Need

- Olive Oil
- Lemon Juice – fresh squeezed is definitely best, you want that bright vibrant flavor.
- Oregano – I used dried oregano for this, but if you have fresh you can use it, just use less than called for in the recipe
- Garlic
- Salt
- Pepper
It is a super easy salad dressing that is full of Greek flavors. There is lots of lemon juice and plenty of oregano. It is great with Greek Pasta Salad or on a side salad or even with tomatoes and cucumbers for a Greek style salad.

How to make Greek Dressing
- Measure Ingredients. Add all of the ingredients together in a jar with a tight fighting lid. It can be a plastic storage container or a canning jar.
- Emulsify. Just shake like crazy until it is all blended. If you don’t have a jar, you can use a whisk to mix together in a bowl or liquid measuring cup.
This Greek salad dressing recipe is super easy to make. The hardest part is squeezing the lemons. I highly recommend that you use fresh lemons and take the couple minutes to juice them. But if all you have is the bottled lemon juice it will work.

Recipe Tips & Suggestions
- I like to use a mason jar or a Tupperware container to mix the dressing in. Shaking it really well is will get the oil and lemon to combine, and emulsify like it should. You can whisk if you want, but it is harder to get it to come together.
- Fresh lemon juice really is the key to a bright and delicious dressing. So don’t use the bottled stuff for this.
- You can absolutely make this ahead. It will last at room temperature for up to 2 weeks, and in the fridge for even longer. If you store in the fridge, let it come to room temperature before serving, as it will get thick and almost solid during storage.
- This Greek Vinaigrette can be a great marinade for chicken, you can drizzle over shrimp. Serve with mixed greens, or tomatoes and cucumbers, or even as a dip for fresh pitas.

Greek Vinaigrette
Ingredients
- 1/2 cup olive oil
- 1/4 cup fresh lemon juice, 2-3 lemons
- 1 clove garlic, grated
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon fresh black pepper
Instructions
- Place everything in a plastic or glass container with a tight fitting lid.1/2 cup olive oil, 1/4 cup fresh lemon juice, 1 clove garlic, 1 teaspoon dried oregano, 1/2 teaspoon salt, 1/4 teaspoon fresh black pepper
- Shake until well blended.
- Store in fridge. Allow to come to room temperature before using (the oil solidifies in the fridge).
