This is my super-easy homemade pancake mix that I make with 5 ingredients! You likely already have what you need. Just whisk everything together and keep this mix in the pantry until you’re ready to make pancakes. It stays fresh for months!

It’s time to ditch the box! After today, you’ll be able to make fluffy pancakes anytime with your own easy homemade pancake mix. I’ve used this recipe for ages, and it always has a place in my cupboard. If your family loves pancakes as much as mine does, making a mix from scratch is the way to go.
Why You’ll Never Go Back to Store-Bought Pancake Mix

- Use it for pancakes AND waffles. This mix is so versatile. Use it to make pancakes or waffles, and customize your batter with add-ins like fruit, chocolate chips, and more.
Ingredients You’ll Need
Classic homemade pancakes start with basic ingredients. I’ve included notes below, and you’ll find the printable recipe in the recipe card after the post.
- Flour – I make my mix with all-purpose flour, but you can use whole wheat flour or even your preferred gluten-free flour blend.
- Sugar – Granulated sugar, brown sugar, or any kind you’d like. I like to use minimal sugar in the mix since I’m all about smothering my pancakes with maple syrup when serving!
- Baking Powder, Baking Soda, and Salt – Some mix recipes use only baking powder, but I like to use both for even more lift in my pancakes.
How to Make Pancake Mix At Home
This recipe makes A LOT of homemade mix, so you won’t have to run to the store for pancake mix any time soon. Plus, it’s so easy and delicious. To make it:
- Combine. Add your mix ingredients to a glass mason jar or bowl.
- Mix. Whisk the ingredients together (or close the lid on the jar and shake). Tada!
Store the pancake mix in an airtight container in a cool, dry location. You’ll have enough mix for about 7 batches of pancakes (6 pancakes each).
How To Use Your Mix To Make Pancakes
- Mix the wet ingredients. While you heat a skillet or griddle over medium-high heat, whisk together milk (or use buttermilk to make buttermilk pancakes), egg, butter, and vanilla in a bowl.
- Add the mix. Gently stir in the pancake mix. Take care not to overmix your pancake batter. It’s fine if there are a few lumps, as these make the pancakes even fluffier.
- Cook. Lightly grease the skillet with butter or cooking spray. ¼ cup at a time, scoop the pancake batter onto the hot pan. Cook the pancakes for 2-3 minutes, or until you see bubbles popping on the surface, then flip. Cook for another minute or two until the pancakes are golden.
Turn It Into Waffle Mix
Waffles rely on extra fat to crisp the outside edges and ensure that they don’t stick to the waffle maker. My easy trick to convert this pancake mix to waffle mix is to add oil.
For every 1 cup of dry pancake mix, add 2 tablespoons of oil. So, for the pancake recipe I include in the recipe card, simply mix 2 tablespoons of oil into the wet ingredients to make a delicious batch of waffles instead.

How to Store
- In the pantry. Keep this pancake mix airtight at room temperature in a cool, dark place. It lasts about 6 months (about as long as your favorite store-bought mix!).

Homemade Pancake Mix
Ingredients
- 6 cups all-purpose flour
- 6 Tablespoons granulated sugar
- 3 Tablespoons baking powder
- 2 teaspoon baking soda
- 1 teaspoon salt
To Make Pancakes (About 6 Pancakes):
- 1 cup pancake mix
- ¾ cup milk, or buttermilk
- 1 large egg
- 1 Tablespoon melted butter
- 1 teaspoon vanilla extract
Instructions
- Mix all of the ingredients together. Store in an airtight container for up to 6 months.6 cups all-purpose flour, 6 Tablespoons granulated sugar, 3 Tablespoons baking powder, 2 teaspoon baking soda, 1 teaspoon salt
To Make Pancakes:
- Heat griddle over medium high heat.
- Mix together the milk, egg, butter and vanilla until well combined. Add to the pancake mix and mix until it is combined, lumps are ok.1 cup pancake mix, ¾ cup milk, 1 large egg, 1 Tablespoon melted butter, 1 teaspoon vanilla extract
- Brush surface with butter or non-stick spray. Scoop about ¼ cup of batter onto the hot surface and cook for 2-3 minutes, until lots of tiny bubbles are on the surface. Flip and cook for 1-2 more minutes.

- Makes approximately 7 batches of pancakes.
