No Bake Peanut Butter Cookies – one of the easiest desserts you will ever make. No Bake Cookies with just a few ingredients that are ready in just minutes, with lots of peanut butter flavor!

Do you remember the Classic No Bake Cookies from when you were a kid? They were one of my favorites. So darn easy to make, just a few ingredients, and a few minutes is all you need!

My husband is one of those strange people who aren’t big fans of chocolate. So this version with just peanut butter is more his speed, and even this chocolate lover think they are delicious and addicting!

You guys know that I am a big fan of peanut butter. It a family favorite, and you guys love it too! These Peanut Butter Chocolate Chip Cookies are one of the more popular recipes on the blog, and one of the softest and best cookies ever!

These are a no bake cookie that are ridiculously easy to make. Seriously just 6 ingredients and about 10 minutes is all it takes.

What You’ll Need

  • Butter – I always use unsalted butter when baking
  • Sugar – I used Imperial Sugar for this recipe
  • Milk
  • Creamy Peanut Butter
  • Vanilla Extract
  • Old Fashioned Oats

How To Make No Bake Peanut Butter Cookies

  1. In a saucepan melt the butter over medium heat. Add in the sugar and milk.
  2. Bring the mixture to a boil and cook for 1 minute, stirring frequently.
  3. Remove the mixture from the heat and add vanilla extract and peanut butter, mixing until it is smooth.
  4. Fold in the oats until they are well coated.
  5. Scoop rounded tablespoons full of batter onto a lined cookie sheet.
  6. Allow to cool completely before removing and storing in an airtight container.

My Cookies Didn’t Set Up

This is really the only thing that can go wrong with this recipe. And it really comes down to letting the mixture boil long enough. You are basically making a candy, by melting the butter and sugar together. So you need to make sure it cooks long enough for the sugar to set up. Having the mixture come to a full boil, and then cooking for a full minute, is what it takes. Use a TIMER!!

Storage

Once the cookies have set up completely, store them in an airtight container at room temperature for a week. There are not any ingredients that actually require it to be in the fridge, I just think they last longer that way. Depending on the temperature of your house, the peanut butter can soften and be harder to eat.

You can also store them in the freezer for up to 5 months. Once the cookies are completely set, store in an airtight container. They are perfect to add to a lunch box or set on the counter and for an hour and then enjoy.

What Kind of Oats To Use

The recipe calls for old fashioned oats and they are really my favorite. They really help the cookie set up and give it a chewy texture. You can use quick cooking oats, and the cookies will set up and work perfectly. I just don’t think they are quite as good. But if that is all you have, you can definitely still make them.

Can I Use Crunchy Peanut Butter

Yes, you absolutely can! We are a house divided when it comes to peanut butter, so I always have both creamy and crunchy on hand. I prefer creamy in this recipe because I like the texture better. But crunchy works and if you may even like the crunch it gives better!
