Fudgy, soft-baked brownie mix cookies are close relatives of cake mix cookies! They’re just as ridiculously simple to make, trading a box of cake mix for brownie mix instead.

I have nothing against making chocolate cookies from scratch, but sometimes nothing beats the convenience of a box mix to cut down on ingredients. I’ve used a box of cake mix to get a headstart on everything from cake mix brownies to cookies. This time, I’ve traded cake mix for boxed brownie mix to make the most delicious brownie mix cookies. These chocolate cookies are rich, fudgy, and packed with chocolate chips, with soft-baked middles and crispy edges. With only 4 ingredients and one bowl, baking cookies doesn’t get easier!

Why You’ll Love These Brownie Mix Cookies

  • 4 ingredients. You need only a box of brownie mix and a couple of pantry ingredients to make these fudgy, semi-homemade brownie cookies.
  • EASY. Mix the dough in one bowl, let it chill for a bit, and then bake!
  • Big brownie flavor. These taste just like rich and chocolatey fudgy brownies, baked into a soft chocolate cookie instead. They’re loaded with melty chocolate chips for double the chocolate in each bite. 
  • Adaptable. Why stop at chocolate chips? Customize these cookies however you’d like with your favorite add-ins.

What You’ll Need

Just wait until you taste how fudgy these cookies are! It comes down to just 4 easy ingredients (plus chocolate chips). I’ve included some quick notes here. You’ll find a printable ingredients list with the full amounts in the recipe card.

  • Brownie Mix – You’ll need one box of your favorite store-bought brownie mix. I also have a homemade brownie mix I’ll use when I have some in the pantry.
  • Flour – All-purpose works best here.
  • Vegetable Oil – I recommend a neutral-flavored oil, like canola.
  • Eggs – I add an extra egg for a chewier cookie.
  • Chocolate Chips – Optional, but I can’t resist adding even more chocolate to these chocolate cookies! If you prefer, you can skip the chocolate chips or swap them for more add-ins like chopped nuts, M&Ms, toffee bits, etc.

How to Make Brownie Mix Cookies

The brownie cookie dough comes together in a few minutes. It does require some chilling, but the wait is more than worth it! Here’s how to make chewy chocolate cookies from brownie mix. Scroll to the recipe card for the printable directions!

  • Combine the ingredients. Make the dough by combining your brownie mix with the rest of the ingredients. Then, fold in any add-ins. 
  • Chill the dough. Pop the cookie dough into the fridge to chill for at least 30 minutes. Chilling is important so that the cookies don’t overspread while they bake. Don’t skip this step!
  • Portion and bake. Afterward, scoop and roll the dough into balls. Arrange the cookies on a lined baking sheet and bake at 375ºF for 9-11 minutes until they’re set at the edges.

Recipe Tips and Variations

  • Chill to avoid overspreading. The cookie dough must be cold from the fridge and shaped into tight balls when it goes into the oven. These brownie mix cookies tend to spread in the oven, so chilling the dough is an important step for a thick, chewy cookie.
  • If your brownie mix comes with a chocolate syrup packet, discard it (or save it to drizzle over the cookies afterward!). You won’t need it for the cookie dough.
  • More add-ins. Stir in chopped pecans, walnuts, white chocolate chips, chopped chocolate, butterscotch chips, or candies, like M&Ms or Reese’s Pieces.

How to Store

  • On the counter. Store these brownie cookies airtight at room temperature for up to 4 days.
  • Freeze. You can freeze brownie mix cookies for up to 1 month. Store them airtight in a container or freezer bag and thaw the cookies at room temperature.

Brownie Mix Cookies

Fudgy, soft-baked brownie mix cookies are easy to make with only 4 ingredients! Use a box of your favorite brownie mix to make the dough in one bowl, then chill and bake.

Ingredients 

Instructions 

  • Add brownie mix, flour, oil, and eggs to a mixing bowl, and mix until everything is combined. Fold in chocolate chips.
    1 18-19 ounce box of brownie mix, ¼ cup all-purpose flour, ¼ cup vegetable oil, 2 eggs, ½ cup chocolate chips
  • Chill the dough for 30-60 minutes.
  • Preheat oven to 375º F.
  • Scoop balls of dough that you can roll and place on a lined baking sheet.
  • Bake for 9-11 minutes, until the edges are set, the tops start to crack and appear dry. Remove from the oven and let cool for 5 minutes before removing to a wire rack.

Notes

  • Make sure that the cookie dough is cold when it goes into the oven, to prevent overspreading. 
  • Chocolate chips are optional. Other good add-ins include nuts, other chips or M&M’s.

  1. I wanted to make these for 2 parties that are 2 days apart. Do you think I can leave the dough in the refrigerator for 2 days, then scoop and bake, or will it dry out.

    1. If you cover it really well, I think it would be ok. Just let it warm up before you scoop the dough 2 days later. It will get pretty solid sitting in the fridge.
