Chicken Pesto Wraps

Chicken Pesto Wraps – super easy chicken wraps that you can make ahead or serve for a quick and easy dinner! Filled with chicken, cheese, pesto, tomatoes and more!

I love having a wrap for lunch. They are easy to have in the fridge waiting for you or take with you to work or school. And there are a million ways you can mix them up! Southwestern Chicken Wraps might be my favorite.

But you can do Buffalo Chicken Wraps, Chicken Caesar Wraps, Chicken Bacon Ranch Wraps…..whatever you want to put it a tortilla works!

What You’ll Need

  • Large tortillas or wraps
  • Cooked Chicken
  • Pesto
  • Mozzarella Cheese
  • Avocado
  • Spinach

What Kind Of Chicken To Use

For the chicken you really can use any chicken that you have. I like to use rotisserie chicken from the grocery store, so it is already cooked and seasoned. That way, it literally is a meal I don’t have to cook anything.

But you can use leftover chicken, chicken tenders that you cook and cut up, and this would even work with leftover turkey when you have it around the holidays.

Best Pesto To Use

Store bought is super easy to find and what I use often. You can usually find a fresh version near the fresh tortellini and other pastas, and a shelf stable version down the dried pasta aisle. I have used both, and it really is just what you prefer. But if you are looking for homemade version I have 2 that I really like.

  • Arugula Pesto – the spicy arugula with the basil gives it a great flavor. Not quite the same as the original, but still really good.
  • Spinach Pesto – this is a blend of spinach and basil, it gives it a little bit of a milder taste that using all basil.

How To Make Chicken Pesto Wraps

  1. In a bowl mix together chicken, pesto and cheese until well combined.
  2. Arrange tortillas on a surface in front of you. Place a small handful of spinach in the center of each. Place slices of avocado over the spinach. Divide the chicken mixture evenly between the tortillas.
  3. Fold the sides over the chicken and tightly wrap to close. Cut in half and serve.

Filling Ideas

I went simple with just Mozzarella cheese, spinach and avocado for these. But there are lots of ways you can customize it. Here are a couple that I really like as well.

  • Add sliced tomatoes
  • Add sliced red onion
  • Mix up the cheese – cheddar is great, but so is smoked gouda or even feta
  • Bacon – the saltiness is a really great unexpected flavor to add to these
  • Greens – I used spinach, but any type of green works great. Romaine lettuce, iceberg lettuce, mixed greens…whatever you have or like is perfect.

I know a lot of people want to cut carbs lately and you can easily use low carb tortillas to make these. Everything else naturally fits the low carb diet, so they make a great option if that is what you are looking for.

Ingredients

  • 2 large flour tortillas
  • 1 cup cooked chicken, chopped or shredded
  • 1/3 cup pesto
  • 1/3 cup shredded Mozzarella cheese
  • 1 avocado, sliced
  • handful spinach

Instructions
