Curry Chicken Salad – take your chicken salad to a whole new level with this curry version. Loaded with celery, cashews, and shredded chicken for an easy and quick meal.

People can be very opinionated about their Chicken Salad and Egg Salad recipes. Celery vs onions, do you include dill pickle relish, olives or no olives. The arguments go on. I figure there is room for all recipes, and depending on your mood it can be fun to switch it up!

This curry chicken salad is super simple, and just uses a little curry powder in the dressing to take it to a whole different level with tons of flavor!

  • Pick up a rotisserie chicken at the store and you can have this ready in 10 minutes. So simple to make, and great for any leftover or already cooked chicken you have!
  • You can mix up the ingredients. I added celery and cashews, but raisins are a very common addition if you want that hint of sweetness. Don’t like cashews, use almonds. Lots of possibilities.
  • Make a big batch on the weekend and you have meal prep done for a few days. Take it to work or school with crackers, on bread, on a salad – super versatile!

What You’ll Need

  • Shredded Chicken
  • Mayo
  • Sour Cream
  • Honey
  • Curry Powder
  • Garlic Powder
  • Onion Powder
  • Salt & Pepper
  • Chopped Celery
  • Parsley
  • Cashews

I like the mix of mayo and sour cream together for this, but you can definitely use all mayo if you prefer. Or even yogurt as a substitution is a great idea.

How To Make Curry Chicken Salad

  1. Make the dressing. Mix together the mayo, sour cream, honey, curry powder, garlic and onion powder as well as the salt and pepper. Once it is well blended, you can taste and add more curry powder if desired.
  2. In a large bowl toss together the shredded chicken, celery, chopped parsley and cashews
  3. Pour the dressing over the chicken mixture and mix until everything is well coated.
  4. Store in the fridge until ready to use.

How To Serve Curry Chicken Salad

The thing about chicken salad is you can really enjoy it however you want!

  • Buns – hamburger/hot dog buns work great. The Kaiser rolls and other bakery rolls work well too.
  • Croissant – a buttery flakey croissant is so good with chicken salad.
  • Wrap – put it in your favorite tortilla or wrap and fold it up.
  • Lettuce – keep things low carb and healthier by serving it on a bed of fresh spinach, mixed greens or your favorite lettuce.
  • Stuffed Tomatoes – In the summer when tomatoes are super fresh hollowing out the inside and stuffing it with chicken salad is a great idea for a buffet or to feed a crowd.
  • Crackers – my family loves to enjoy it almost like a dip and serve on whole grain crackers.
  • Bread – pick up some hearty or good quality bread and serve it on toasted bread for a delicious sandwich.

How Long Does Chicken Salad Last

Storage –  If you make it ahead you can store it in the fridge for up to 3 days in an airtight container. So it is great to have on hand for lunches during the week.

Having a picnic? If you are serving it at a potluck or taking it on a picnic where it will sit out in hot weather, it will last for about an hour. At room temperature it will be fine for two hours. whenever mayonnaise is involved it is always important to keep an eye on the time.

This is something you ideally don’t want to freeze. Technically it does work, and I have done it before. But the texture changes when you freeze mayo and sour cream. They can break down and become watery when you thaw them.
