Grilled Chicken Antipasto Salad – An easy salad that comes together in minutes filled with cured meats, cheese, olives, vegetables and topped with Italian dressing.

Salads can either be amazing, filling, and delicious or they fall flat. They can be boring and leave you feeling hungry. I am all for a salad that is loaded with things I like, so I will actually eat it. No one wants just a bowl of lettuce.

So this anitpasto salad is loaded with so many delicious things, you won’t be bored and you will be satisfied and full when you are finished.

Let’s start with some basics, because there is always questions around antipasto…..

What Is Antipasto Salad?

It is basically a salad that is known to have originated in Italy. It is often served as the first course of a meal. Often it includes sliced meats, vegetables, olives and is tossed with a light vinaigrette dressing.

What’s Included In Antipasto

This is a really broad category, so you can always pick and choose your favorite when assembling a salad.

  • Cured Meats
  • Olives
  • Pepperoncini
  • Mushrooms
  • Artichoke Hearts
  • Anchovies
  • Cheese (Provolone or Mozzarella)
  • Vegetables
  • Sometimes tuna

What Dressing To Use

I like to use an Italian vinaigrette dressing when I am making this salad. It just makes it easy, but you really can mix it up. Generally it is served with a light olive oil dressing, so you don’t want something heavy that will take away from the flavor of the salad.

I also like to add Tyson® Grilled & Ready® Chicken to the salad. That way I can add lean protein to help fill you up, without too many of the cured meats.

How To Make Antipasto Salad

  1. Add chopped romaine to the bottom of the large salad bowl. You can also do smaller versions for people to top however they like.
  2. Arrange your meats, cheese, and vegetables over the top.
  3. Add dressing and toss together until the dressing evenly coats the salad.

This is one salad that you can assemble ahead of time. Do not dress the salad until you are ready to serve, but the meats and cheeses don’t go bad or make the lettuce soggy as it sits. So it is great to take to work for lunch, or make ahead for a large party.

This antipasto salad recipe is super simple, and one you can throw together in minutes! Similar to a Charcuterie Board, you can really use whatever you have on hand, to make it filling and delicious.

Grilled Chicken Antipasto Salad

Ingredients 

  • 6 Romaine Lettuce, ,chopped
  • 8 oz Grilled Chicken, chopped
  • 1/2 cup Pepperoni, sliced
  • 1/2 cup Salami, sliced
  • 8 oz Artichoke hearts, chopped
  • 1/2 cup Grape tomatoes, halved
  • 1/2 cup Black Olives
  • 1/4 cup Red onions, thinly sliced
  • 8 oz Mozzarella cheese balls
  • 1/2 cup Italian Dressing, approximately

Instructions 

  • In a large bowl add romaine lettuce.
  • Top with chicken, pepperoni, salami, artichoke hearts, tomatoes, black olives, onions, and cheese.
  • Pour Italian dressing over the salad and top to combine.
