These S’mores Rice Krispie Treats are a fun twist on a classic using Golden Grahams cereal, plenty of marshmallows and of course chocolate!

Classic Rice Krispie Treats are a classic for a reason. There is just something special about them. But you really can mix it up and use different cereals to make fun new versions! Lucky Charms Krispie Treats and Fruity Pebbles Krispie Treats are just two favorites.

One of my all time favorite cereals is Golden Grahams. I could probably go through a whole box just eating it by the handful. But this time, I decided to use it in a fun new krispie treat form.

They make up the graham cracker portion of the s’mores treat. These are held together by the normal gooey marshmallow mixture, but you also have pieces of mini marshmallows and chocolate chips mixed in, so you get a little bit of the s’more components in each bite!

  • No Baking Required – just like the classic, you can use the microwave or stovetop to melt the marshmallows and butter together. Then it is just mix it and let it set up. No oven or baking required!
  • Easy – all you need is about 5 minutes and you can have these setting up and ready for you. So simple, even the kids can make them!
  • Gooey Deliciousness – not only do you have the melted gooey marshmallows, but you also have mini marshmallows mixed in. So it is gooey, chocolate-y and just delicious.

What You’ll Need

  • Marshmallows – you need full size that you melt as well as mini marshmallows to mix in.
  • Butter
  • Vanilla Extract
  • Golden Grahams
  • Chocolate Chips
  • Hershey Bars

How To Make S’mores Krispie Treats

  1. In a large microwave safe mixing bowl combine large marshmallows, and cubes of butter. Heat for 60 seconds. Remove and stir until melted and smooth. If necessary you can head in 20 second intervals until completely melted.
  2. Stir in the vanilla extract until well combined.
  3. Add in the cereal and mix until everything is well coated.
  4. Finally add in mini marshmallows and chocolate chips and mix until fully combined.
  5. Press into a 13×9 inch baking dish and top with broken Hershey pieces. Let set for a couple hours before slicing.

Recipe Tips & Tricks

  • You can use any type of chocolate you would like. I find chocolate chips are easy to mix in, and I like semi-sweet chocolate, because they are pretty sweet with all the marshmallows. But you can chop up pieces of chocolate and you can use milk chocolate or dark chocolate.
  • Let the treats set up for about 2 hours so they are solid enough to slice into bars.
  • I like to add the mini marshmallows after the cereal is coated so it gives the marshmallow mixture a chance to cool down a little. This keeps the shape of the mini marshmallows, and they don’t just melt into the bars.
  • These bars are not quite as dense as traditional krispie treats because of the shape of the cereal. If you want them to be more compact and a little denser, crush half of the cereal. This will help “fill in the cracks” and give you a more traditional texture.

Storage

Cover the bars or transfer them to an airtight container and let them set at room temperature for 3-4 days. You do not want to refrigerate or even freeze these, they will dry out and the texture will change.

S’mores Krispie Treats

Ingredients 

  • 6 Tablespoons unsalted butter, cut into cubes
  • 10 oz jumbo marshmallows
  • 1 teaspoon vanilla extract
  • 8 cups Golden Grahams cereal
  • 1 cup mini marshmallows
  • 1 cup semi-sweet chocolate chips
  • 2 Hershey Bars, broken into pieces

Instructions 

  • Spray a 13×9 inch baking dish with non stick spray. Set aside.
  • In a large microwave safe bowl combine jumbo marshmallows and butter pieces. Microwave for 6 seconds. Remove and stir well until melted and smooth. If necessary, heat at 20 second intervals to fully melt.
  • Stir in vanilla extract.
  • Add cereal and mix until well coated.
  • Stir in chocolate chips and mini marshmallows and mix until evenly incorporated.
  • Press into prepared baking pan. Spray spatula with non-stick spray and press into an even layer.
  • Top with broken Hershey pieces, gently pressing into the bars so they stick.
  • Let everything cool for about 2 hours before slicing to serve
