Green Bean Casserole – my favorite holiday side dish is this green bean casserole from scratch! No canned soup and absolutely delicious!
The holidays are such a great time of year. Not only do you get to spend time with family and friends, but you get to eat all kinds of delicious food. Plus so many traditions and making memories. Every year the day after thanksgiving we make a big batch of Chex Party Mix that lasts us all through the holidays.
Plus you have the centerpiece of the show the Roasted Turkey with has a glorious crispy skin and is moist and delicious. But I have to say my favorite part of the holiday meals just might be the green bean casserole.
I didn’t grow up with green bean casserole in our house. I think my mom may have made it once, and no one was a fan. Then I met my husband and started going to his holiday dinners. His mom made this green bean casserole without mushroom soup that I absolutely loved. And to this day it is a staple every year!
Green bean casserole from scratch is really easy to make, it takes only a couple minutes longer than using a can of condensed soup. And in my opinion makes it a thousand times better!
Green Bean Casserole Ingredients
Pretty basic ingredients, but the white sauce makes them so good!
- Flour
- Butter
- Milk
- Green Beans (fresh, frozen or canned all work)
- Crispy Onions
- Nutmeg
- Salt and Pepper
How to Make Green Bean Casserole
- Start by melting your butter in a skillet. Once it is completely melted add in the flour and mix until you don’t see any white bits of flour.
- Cook the flour mixture for a couple minutes. Stir it often because you don’t want it to burn, but you do want to make sure you don’t have any raw flour taste in your sauce.
- Whisk in the milk and stir until it is nice and smooth. It will thicken as it cooks.
- Season with salt, pepper and nutmeg. The nutmeg just gives the sauce that something special taste.
- Add in your green beans and mix them around until everything is well covered.
- Put the green bean mixture into a casserole dish and bake until they the sauce is bubbly and everything is cooked.
- Top with the crispy onions and broil for a couple minutes until they are golden.
This is a great make ahead green bean casserole. You can just stop before you put the beans in the oven. Refrigerate them until you are ready to cook them, and then continue with the recipe. We often assemble them in the morning and then bake them for dinner on busy holidays.

Green Bean Casserole
Ingredients
- 2 Tablespoons butter
- 2 Tablespoons all-purpose flour
- 1 1/2 cups milk, (I use skim)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon fresh ground nutmeg
- 2 14.5 oz can green beans, drained and rinsed
- 3/4 cup fried onions
Instructions
- Preheat oven to 350 degrees. Grease or spray a 9 inch pie plate.
- In a skillet melt the butter over medium high heat. Whisk in the flour and cook for a couple minutes, stirring constantly.
- Slowly whisk in the milk and bring to a boil. Season with salt, pepper, and nutmeg. Once it starts to thicken, add green beans and stir to coat.
- Pour into prepared pie plate. Bake for 25-30 minutes.
- Sprinkle with fried onions, and return to oven for 5 minutes; or until golden brown.
- Serve immediately.

The Professor’s grandma ALWAYS brought green bean casserole to our Thanksgiving celebrations; she’s been gone about 4 years now but someone else continues to carry on the tradition!
