Italian Chicken Bake – just 5 simple ingredients for a delicious, cheesy, and perfect dinner dinner for any night of the week.

I don’t often share them here on the blog; Slow Cooker French Dip Sandwiches was an exception. Oh, and a one pot meal. One Pot Beef Stroganoff. So this is the 3rd one I am sharing with you. Why? Because I know you will love it!
This Italian Chicken Bake is totally a Dinners, Dishes, and Desserts recipe, so I had to give it to you. It is just 5 ingredients. And I know everyone here is all about simple and easy. It is why we get along so well, we think alike!
Do you know what you are having for dinner tonight? That is a question that you have to answer almost every night of the week, right? Everyone comes home from work or school, and that is pretty much their first question. Not, “Hi, I missed you, I hope you had a good day.” More like “Hi, what’s for dinner.” Just my family?
I like my dinners to have just a few staple ingredients, so I can make them on my busiest night. I am not always the best at planning ahead, so dinners that don’t require any extra trips to the store are my favorite kind.
Plus there is just something about a dinner that is covered in melted cheese that gets everyone excited. Especially when you go to take the first piece out and you get that stringy cheese. Oh, I am getting hungry just writing about it!
So this chicken. You cook the chicken in tomatoes, covered in pesto. So you get lots of herby flavor going on. The chicken stays super moist cooking in the tomatoes. It creates its own sauce as it cooks. You could serve with pasta or even bread so you had something to scoop up all that goodness.
